Elusive have released Double Oregon Trail a couple of times now, to great feedback. Last year they released Sunset (Red) and Midnight (Black) variants of Oregon Trail, both beers were highly rated. Sunset is rated in the top 3 Red IPAs brewed in England. They love brewing quality Red IPAs. Midnight also features in the top ten Black IPAs. They've ramped up both these beers to 8% Abv, increasing the hops alongside the robust caramel bodies. Double Oregon will remain of the light and modern West Coast DIPA style, with a drinkability that belies its strength. We also have fresh original Oregon Trail that started the whole thing off. Stacks // Maple Blueberry & Bacon Pancake Stack Porter 6% A scrumptious pancake porter stacked high with maple, blueberry and bacon blueberry and maple. Breakdancing in Doncaster // IPA 6.5% For the final beer in the British Culture Archive series, they've taken the king of the US hops, Citra, and paired it with the gold-standard of English hops, East Kent Goldings. Citra brings its signature tropical and citrus punch, which underpins the tangerine, mint and floral notes of East Kent Goldings. OVERTONEFirstly they have created a twin range of beers inspired by the concept of double albums, two separate beers with the same base but a slightly different twist, both available together to be enjoyed together. Both beers start with the same malt bill and Galaxy and Ekuanot in the kettle before the dry hopping parts their ways.
Twilight To Starlight 6.2% DDH IPA Twilight to Starlight is double dry-hopped with Mosaic hops to add some blueberry and stone fruit notes on top of peach, papaya and citrus notes. Dawn To Dusk 6.2% DDH IPA Dusk to Dawn is double dry-hopped with Enigma hops to add some sweet berry and white wine notes on top of peach, papaya and citrus notes. Then a new Pale & Sour - Naked Soup 5% Pale Ale Brewed in collaboration with one of their favourite Glasgow hot spots, Naked Soup. A juicy sessionable pale ale with a new hop blend from Freestyle Hops. Kohia Nelson is a blend of Nelson Sauvin and Rakau hops, but the most exciting part is the addition of dried passion fruit seeds to the blend to deliver strong passionfruit, orange and guava juice flavours with hints of citrus. Raspberry Ripple 5.5% Ice Cream Sour Their ice cream sours have been going down a storm so they've decided to launch a fresh new range in the series at a modest and (slightly) sessionable 5.5%. First up is this Raspberry Ripple inspired sour with kilos of fresh Scottish raspberries and vanilla soft serve ice scream swirled through. ELYSIA - DDH IPA w/ @futurebrewingsyd Enticing aromas of ripe Gooseberry, dry White Grape and delicate Honeydew Melon intermingle and compliment one another thanks to a very generous sprinkling of brewery favourite, Nelson Sauvin (T90 and Hop Kief!) In their latest DIPA v series collaboration they are grateful to have worked hand-in-hand with Range Brewing in Brisbane Australia, who have worked in bold and adventurous ways to elevate the Australian brewing scene. In this DIPA they've boldly pushed the boundaries of contemporary liquid hop offerings. While liquid hops have traditionally played a supporting role in their most innovative beers, evolving their impact as technology and real-world feedback shape their usage, this time they wanted them to take centre stage in the brewing process. The aim was to maximise the potential of these full-flavour liquid hop extracts, producing an abundance of aroma and a profound hop resin character. The hop line-up starts with Citra Incognito from Barth Haas, followed by Nelson and Motueka SubZero HopKief from Freestyle for biotransformation. It then progresses to Galaxy and Citra Spectrum before finishing off with Nelson and Motueka Amplifire green hops oil from Clayton Hops, resulting in a layered complexity that rivals the finest dry-hop offerings available. The outcome is a huge New Zealand-led bouquet of grape, lime, and gooseberry, complemented by lingering citrus and peach flavours on a dense resinous body that will have you savouring the intense, all-encompassing hop experience. Lavell's Chocolate Orange Imperial Stout 10% Abv A beer to celebrate our love of Terry, without whom we still wouldn't be in business today. Terry loves big beers, particularly imperial stouts (which apparently we don't brew often enough). Terry also enjoys orange and chocolate flavours in his stout, so this seemed the obvious choice. TARTARUSJust arrived we have 3 different variants of the latest Tartarus Impys. The small Leeds brewery are widely acclaimed for their dark beers, these are limited so treat yourself while they last.
BOURBON CERBERUS Bourbon Barrel Aged Imperial Stout 15% A big imperial stout aged in Heaven Hill bourbon barrels for over 16 months. This beer is dark, thick and delcious with a smooth vanilla and woody flavour addition from the bourbon barrels. This beer is dark, thick and delicious with dark fruit, spices and warm alcohol notes from the brandy barrels. OVER THE WINDS - NE PALE ALE 4.6% Over the Winds is a New England Pale Ale which blends together hops from the Northern and Southern Hemispheres. A base of Extra Pale, Oats, and Caramel Aromatic malts provide a soft mouthfeel for a moreish pale ale. Citrus and ripe pineapple from BRU-1 and experimental hop HBC 520 are blended with big hitting Galaxy hops from Australia for a burst of tropical and citrus fruits. ENDLESS RIVER - WEST COAST PALE ALE 5% A DDH West Coast pale with a full body from lots of dextrin, vienna and caramalt combining with extra pale malt. Baron is a one man micro-brewery run by Jack on a farm in Great Hormead, East Hertfordshire, he works damn hard to produce some stunning beers. Baron Foot in the Door – 8.4% Baltic Porter January 20th is Baltic Porter day. Strong, black lager. Baltic Porters are a closet favourite of the brewer Jack, bringing full bodied malt character with a short lager finish and surprisingly easy drinking for its weight. Here's our first 3 new years releases from the great Derbyshire based craft brewery, and they'll be another 3 new releases at the end of the month, expect the them all to be big juice flavours which is what Pentrich are renowned for. Pentrich Big Stache DIPA A 8.4% Imperial India Pale Ale hopped with Citra and El Dorado hops. Juicy citrus flavours of grapefruit and tangerine combine with notes of papaya and pineapple to make a super juicy DIPA. Pentrich Everything Is Temporary IPA A 6.8% India Pale Ale hopped with possibly our two favourite hops, Citra & Galaxy. Big tropical and citrus flavours are at the fore, backed up with light floral notes and a light bitterness on the finish. Pentrich Sunshine Thief Pale Ale A 5.6% Pale Ale hopped exclusively with Mosaic. Juicy citrus and berry flavours are at the fore with a gentle bitterness on the finish. BEAKDONUT IMPERIAL STOUT
This 11% sumptuous, velvety-smooth imperial stout was made in collaboration with their good friends from Cloudwater. It was brewed using a combination of Terra Rossa cocoa, Callebaut cacao nibs, Madagascan vanilla and Kenyan Karimuki AA coffee from Workshop, before being blended with a portion of stout that had spent two years ageing in select bourbon barrels. We’re getting affogato, brownies and donut shops on the nose followed by flavours of bourbon, cranberry, crème brulee, cinder toffee and heather honey. It might be their most opulent stout yet. Nothing Bound the up and coming microbrewery from the Midlands has a fresh Citra and Riwaka New England India Pale Ale, don't miss it . Three Hills brewing has a Of Juice range with a superb DIPA leading the way. On Friday with have Gouden Carolus Cuvée Van De Keizer Imperial Dark. A special limited edition with powerful notes of roasted malts, caramel and plums, its surprisingly soft and fruity aroma combines a warm roundness with a refreshing taste. Since the inaugural successful launch at Hop City in 2017, Putty has been an annual release in January, they've stuck to the original recipe for this Double IPA. It features a malt base of Golden Promise, a higher-than-normal proportion of wheat malt, along with generous amounts of oats and flaked wheat to provide a well-rounded flavor. The water profile is delicately soft, with substantial whirlpool additions of Galaxy, Mosaic, and Azacca hops. This is followed by an extensive dry hop, with equal parts Mosaic/Galaxy and slightly less Azacca. We recommend leaving the beer for a few weeks to allow for the greeness / hop burn to fade, or buy two, one for now and one for later. There is limited supply on this as ever, we are launching it online Thursday when the lorry arrives for delivery to you Friday. They have gone as big as possible with these full-flavour liquid hop extracts, creating a massive aroma and a deep hop resinousness. The hop bill starts with Citra Incognito from Barth Haas, Nelson and Motueka SubZero HopKief from Freestyle for biotransformation, Galaxy and Citra Spectrum, and finished up with Nelson and Motueka Amplifire green hops oil from Clayton Hops to achieve a layered complexity that rivals the best dry hop products available. Hand-selecting their hops lets Cloudwater be playful with pairings — this lot of Columbus is super dank for an older-school hop, and the Mosaic is very berry-forward, melding to a fruity and skunky delight. AN ODE TO THE MYSTICS An Imperial Stout made with a blend of three Port barrel-aged stouts and cacao nibs. Notes of rich, melted chocolate are complemented with a subtle yet distinct presence of Port character. Each sip delivers an impactful blend of sweet, indulgent melted chocolate, seamlessly integrated with the nuanced Port influence, a medium body, and a silky smooth mouthfeel from the first taste to the lingering finish. COMFORTING HABIT Crafted from a blend of two bourbon barrel-aged stouts with 8 kilograms of dried cherries and infused with vanilla & tonka bean. Aromas of ripe cherries, smooth vanilla notes and rich chocolate liqueur are complemented by an intricate spice from tonka bean. Barrel wood notes work to enhance the expression of cherry, while tonka and vanilla subtly steer this beer’s profile towards the pastry realm. OBJECT OF DESIRE A blend of two bourbon barrel-aged Imperial stouts with the addition of single origin Brazilian espresso-roast beans from Workshop Coffee. Earthy aromas lead to a prominent nutty essence, complemented by deep roasty undertones and a distinctive bourbon character. Track first brewed this beer as part of three beers that they had the pleasure of brewing for International Women's Day, and loved it so much, that they had to bring it back again. Mashed in at a high temperature to preserve body and loaded with extra pale malt, light Munich, flaked wheat, malted oats and a touch of cara gold which all boost the mouthfeel and softness of this beer. Generously dry-hopped with Nelson Sauvin, you’ll find heaps of lemon and orange, a gooseberry and white wine zip as well as hints of mango, white pepper and floral delicacy. BEAKILLU

LHG are always looking to experiment with their Alcohol-Free recipes, here they've translated the texture and aroma of their IPA range down to less than 0.5% Layers of Citra, Mosaic, El Dorado and Sabro bring notes of lemon peel, blueberry, pear and tangerine with a hint of pressed white grape from an addition of Nelson Sauvin Hop Kief™ INFINITE DAYS A generous helping of Naked Oats for a creamy texture, and a hint of toasted biscuit, on a base of Extra Pale base malt. Being Citra-forward, using leaf, T90, Cryo and Incognito, there’s a strong foundation of sweet, floral citrus and passionfruit. Motueka brings out the lime character and Pacific Sunrise adds accents of woody orange and mango. Tropical, floral and creamy. GOLDEN DAYDREAM x Tapestry By PROPS In collaboration with Tapestry by PROPS, LHG present a delightful rye pale ale, utilising Amarillo, Ekuanot and El Dorado for a bright citrus character, complementing the underlying rustic bread notes from the addition of rye malt to the mash. This delight is 2 different imperial stouts aging in 2 different Scottish whisky barrels, then blended together along with black cherry, toasted coconut and cocoa, to create a barrel aged Cherry Ripe (chocolate bar available in NZ and Oz. ) in liquid form. Not stupid sweet or stupid "thicc" BOG MONSTER A Peated sherry barrel aged imperial stout aged with charred Manuka wood. This isn't going to be for everyone, the Scottish peated whisky that lived in the sherry octave before this beer has given it a medicinal quality along with the rich sherry and the pungent smokey notes from the charred Manuka make it pretty unique, DEYALIVING IN AND OUT OF TUNE
Crocmas has come early… As it's nearly that time of year Deya wanted to make something festive and decided to draw inspiration from the legendary drink…Buck's Fizz. They brewed a rice lager base to provide a clean and fairly neutral flavour profile. Then they took some grape juice and orange comminute and fermented it with champagne yeast. This gave us some bone-dry fruity liquid. Deya blended them together, infused the blend with orange and lemon zest and carbonated it to a high level…the result is Bucks Fizz as a beer, delicious! POLLYSMAMBO FIRE
Every now and again you just need to go headfirst into a beer with a single-minded plan in place. The plan for Mambo Fire? Simple - straight up, freshly squeezed orange juice. How to create a boozy breakfast juice though? Say no more, and step forward Mosaic and Amarillo - a two hop combo simple in execution, but incredible as a pair. Pollys have only brought a 10kg addition of Amarillo to the party on this beer but boy does it bring the high-citrus notes to proceedings. Where do you go from there? Oh a 25kg addition of Mosaic to bring a metric tonne of tangerine flavours to this beer? Sure why not. Positively dripping with citrus notes, we feel we've hit the mark with this beer and then some. THE RIVALITA Whilst Polly's are primarily known for their pale and hoppy output, there’s nothing they love more than occasionally dipping their toes into the dark side of things and embracing a stout to keep their brewers happy. In a world awash with crazy adjunct-riddled pastry and dessert stouts, Polly's decided to bring everything back to basics and go all out on a style they ourselves loved in their formative years of drinking beer – the straight up, no fuss Imperial Stout. No messing around on this one; a tickling of Nelson during the boil and then again at flameout give the beer a decent amount of bitterness, but they’ve let the malt firmly do the talking with this beer. Roasted coffee, dark fruits, and chocolate are bursting from this stout that those starry eyed pre-Polly’s drinkers would have been proud of. Just as it says on the can; no nonsense. SOMA CENTRE As another year of festivals draws to a close and Polly's hibernate over the winter period once again. They’ve once again backed up their claim that midst all the hype juice and pastry stouts, there’s nothing that seems to pique people’s interest better than a bright red, stupidly fruited sour beer. A branch of the brewery they feel is becoming one of their strongest offerings with each iteration, their brewers have duly obliged the brief, and have gone all out on Soma Centre. Bringing 50kg of blackcurrants to the party and buffing it up with a further 25kg of lemon before rounding everything off with a hearty 1kg addition of sea salt, the result is a gose that is equal parts puckeringly tart and sweet. PUEBLO Okay, so Polly's are a couple of months into this wonderfully easy to understand new duty reform now, why not do as their contemporaries are and lean into the shackles being put on any and all innovation in our field? Small Pale Ales were a regular feature of their first year as a commercial brewery, and with everything going on in the wider world, they unanimously agreed to revive this dormant style from their Originals range that they loved so much. A pale ale that is bringing absolutely no funny business along with it – a super reeled back 8g/l dry hop bill of Azacca and Mosaic bring a whole host of those typical Polly’s juice notes to the party, but at a mega crushable 3.5%; perfect for smashing pints of with pals whilst sharing good times. Expect the usual – clean notes of lemon, pine and grapefruit backed up with super juicy mango, candied oranges, and stone fruits. TRACKVOYAGE x Messorem
Messorem, Hailing from Montreal, Canada - Make some of the best beer that Track had the pleasure of tasting in North America, so it was a pleasure to brew a hazy DIPA for their first time over in the UK. Pours, pure yellow haze. Like sunlight fresh from the can. Packed full of Motueka, Riwaka & Nelson CGX. Tons of fresh lime, tart gooseberry and slushy mojito. LONG STRETCH Track have given one of their most loved styles the single hop treatment with one of their favourite hops, Mosaic. This Hop was meant for beers like this. Fresh, bright orange peel with a pronounced and lasting bitterness. LIFT EVERYONE UP x Fast Fashion This is the last of a series of collaborations with Track's friends at Fast Fashion Brewing. First released at Jester King in October of 2010, Wytchmaker is brewed with Texas-grown San Jacinto Two Row and Wildfire Pale Malt from TexMalt, malted Rye, and oats. It's kettle hopped with Citra and El Dorado and dry hopped with Simcoe, Amarillo, Citra, and Mosaic Cryo. We fermented it in stainless steel with Imperial A38 Juice yeast. It's super fresh, hoppy, and delicious! RESIDENT CULTURELIGHTNING DROPS

Cherry BA Flanders Red with Scottish Honeyberries Holy Goat picked two standout barrels of their aged Flanders Red for this beer. These had been aging in whisky casks which had previously held the beer-soaked whole cherries producing their beloved Unholy Mountain kriek. We blended these barrels with a smaller portion of beer brewed and aged at the Hanging Bat in Edinburgh, which were aged in a quarter casks. The oxidative nature of aging in small barrels lent a rounded acidity when blended with the cherry barrels. We then refermented this blend on 200g/l of whole Scottish honeyberries for two months. 780 bottles only. BLOOD EAGLE BA Flanders Red with Smoked Plums Harking back to one of their earliest releases, Blood Eagle returns! A cross between a Flanders Red and a British stock ale, brewed with a mixture of crystal, amber and rye malts. Primary fermentation was undertaken with one of our favourite Brettanomyces blends, in addition to Holy Goat's house culture of yeast and bacteria. This beer was then blended (70/30) with a one-year-old stock ale aged in red wine barrels. They transferred this blend onto 200g/l of this seasons Victoria plums. A portion of these plums were smoked over wine barrel staves at the brewery. The resulting beer is complex and vinous with a subtle smoke. EMPEROR'S HAND x Emperor's Whisky BA Imperial Stout with Honey and Smoked Plums Unleashing the darkest will of the emperor, they combined forces to brew a spectacle of his power. Brewed with an array of dark malts, muscovado, demerara sugar and caramelised honey. Fermented with smoked plums within three freshly emptied whisky casks (Ailsa Bay, Blair Athol and Girvan). Deep woody oak and a sweet oaken smoke, overlain by honey glazed caramelised plums. Bottle conditioned. 768 Bottles only. HOLY MOUNTAIN 2023 Kriek style sour with Stevnsbær sour cherries Inspired by the Belgian kriek style, this golden sour beer has been aged on Danish sour cherries. This beer combines a blend of two of Holy Goat's favourite golden sour base beers, both brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. They aged this base beer for two months with 700kg of ‘Stevnsbær’ sour cherries, sourced from the orchards on the Frederiksdal estate used to produce award-winning Danish cherry wine. A punchy 21g/L mid-fermentation dry-hop of two of the biggest and dankest hops in the biz. NARWHAL ENIGMA The best of both worlds. Red, malty, caramelly goodness, with a mega addition of Australian Enigma. Red berries, black tea and big red grapefruit aromas from this lovely, very recognisable hop. Perfect for a red beer, and quite a different experience to the typical hazy IPAs. HEADSTRONG A session strength, no-adjunct, no-nonsense Porter at 4.4%. A whole host of dark malts for a complex depth and smooth chocolate biscuit finish. No pale malts, all speciality grains for many layers in a weak, black beer. MOON WATCH While low in booze, it still holds on to plenty of hop character from two Antipodean big hitters, NZ Eclipse (slick moon reference) and AUS Riwaka. This is Pastore's first aperitivo style sour beer. A style they've long wanted to try and make but always approached with trepidation due to the bitterness. Ultimately they have tried to find a balance of both bitterness & acidity to make a Pastore aperitivo beer. Pastore infused the wort on brewday with gentian root, to bring bitterness, & juniper berries. Then fermented with their fresh sour mixed culture for that lovely lactic zing. They then conditioned on bitter oranges for more layers of bitterness and citrus aromatics & cherries for colour. We will also be receiving Pastore's new 'Sorbetto Strawberry, Cherry & Lime'! A big West Coast IPA, brewed with 100% Maris Otter malt, hopped on the hot side with Simcoe, Centennial and Chinook. Huge dry hop with Simcoe, Chinook, Citra and Columbus varieties for classic pine resin, grapefruit and citrus notes. Pithy! VATTED PORTER A ramped up version of Burning Sky's Robust Porter, this beer spent a year ageing in oak vats. The finest Maris Otter, roast and crystal malts give rich coffee and chocolate notes. Warming alcohol makes this a new fireside companion for the winter season. PETITE SAISON This mixed fermentation saison is a light and easy drinking small beer. Barrel aged for a few months, this delicate beer was then dry hopped for a refreshing finish before canning. ON RETURNING Burning Sky's second collaboration release with Kelly Ryan and Boneface brewing this year. A pilsner malt with wheat and spelt, Nelson Sauvin hops and a subtle blend of spices. Fermented with their unique mixed culture strain in oak barrels for six months then blended and dry hopped with more Nelson Sauvin. Aged on the full grape, this expresses much more straight-up rosé qualities that wouldn't go amiss at a festive dinner! Berry fruits and a crisp finish. ELDERFLOWER RESERVE A Suffolk summer flashback in bottle form. 6kg of fresh foraged elderflower heads went into this 2 barrel batch of golden sour originally brewed in August 2020! Highly skilled in the dark side, the Emperor joined Overtone to brew this special imperial stout inspired by strength and power. They created a 13% rich stout with honey and demerara in the base before conditioning the beer on our main ingredient, tonka beans. Tonka is a magical ingredient with great powers of seduction, much that of Darth Sidious. The tonka enhances the rich and sweet flavours in the base while adding some spicy and nutty vanilla notes for a well-balanced stout. PIZZICATO Inspired by some of the greatest lagers made in Europe, this beer has taken its time to mature and mellow, becoming a thirst quenching, refreshing, quaffable drink that augers another sip, and another until it’s all gone. Smooth, succulent, and super sip-able. Komeda brings aromas of zesty grapefruit and fresh crushed pine, with the additions of hops into the whirlpool. A beautiful combination of US and NZ hops; Azacca, Rakau and Mosaic Cryo, to heighten the flavours of white peach, sweet nectarine, and pink guava. North added oats to bring a gentle, soft finish to this mouth-watering Session IPA, balancing against the refreshing dry pithy notes. This soft, juicy and eminently drinkable session strength pale ale punches welllll above its weight. Equal measures of Cashmere and Rakau provide intense stone fruit vibes, with notes of fleshy nectarine, peach rings, fig and lemon zest. LIGHT YEARS Pouring thick and hazy, this IPA is full to the brim with Nelson Sauvin with supporting acts from Mosaic and Simcoe. Expect wonderful dank fruit flavours of passionfruit and grape, with a hint of bubblegum with subtle background pepperiness. An absolute birthday banger. COSMIC DANCE Another celebratory rebrew of a maiden release, Cosmic Dance is soft and fluffy from plenty of oats and loaded with a beautiful blend of Motueka from two different hop providers, Freestyle and Clayton Hops as well as Motueka hop kief. Two Flints also got their hands on some super juicy Strata to back up those tropical and zesty lime aromas. It’s an IPA singing with flavours of lemongrass, kiwi and lime and green starburst. SONIC MUSE A rebrew of one of Two Flint's maiden releases, this westie is new school meets old school. Munich and Vienna malt bring some sweetness and amber colour, which is balanced by a firm, lingering but clean bitterness. Simcoe and Centennial pop with retro pine sap notes and grapefruit whilst a hot side addition of Idaho 7 introduces a touch of ripe mango. Talus in the dry hop offers the best of both worlds offering notes of orange zest and grapefruit. AZVEXALICE RINGS
Recently Azvex have been having some real success with NZ hops in their DIPAs, so they flipped them over into an IPA to create the amazing Alice Rings. Citra, Riwaka, Nelson Sauvin & Motueka deliver that DIPA flavour and mouthfeel but in the lower IPA ABV range. COSMIC RADIATION It's been a little while since Azvex played around with the new hot hit hop Nectaron, so they thought that they would add a hefty dose into this IPA alongside Citra & Mosaic. With a blend of blackberry, blackcurrant and apple pie crumble flavours, it's a disgustingly moreish twist on a familiar favourite. Neon Raptor have been brewing up imperial stouts for as long as they’ve been brewing and Christmas always feels like the right time to release a big scary beast. So, although Centaur Army and BA Centaur Army are on their merry way, they feel like they've been neglecting the flavours of the season. Here is Krampus Night, Neon Raptor's first seasonally themed imperial stout. This Krampus will beat your taste buds with deliciousness and will kidnap your heart with every sip, in a good way. This is Christmas pudding in a can, all rich dark fruity cakey stouty goodness. Track have given one of their most loved styles the single hop treatment with one of their favourite hops, Mosaic. This Hop was meant for beers like this. BA Flanders Red with Strawberries. Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blended base was transferred onto the spent fruit (tayberries) and lees from Holy Goat's previous batch of Spectral Lore. They refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery. SAKE KASU BEER 2023 x The Sparkling Sake Brewery One of Pastore's favourite beers from last year returns with some tweaks this month. For this year's edition they took the sake kasu (lees) from Naoki at The Sparkling Sake Brewery up the road from them in Little Downham and primary fermented some rice saison on it along with their mother culture of wild yeasts before ageing for a further six months on lees and finally bottle conditioning. The key difference from last year is the primary fermentation - last year's vintage was aged for a month on lees post stainless steel ageing. The primary ferm has brought lots more sake / rice fermentation character with lots of citrus esters & savoury elements. The beer is all together spritzy, rich, complex, acidic & dry! SANGUINETO x Husk Beer A blend of barrel aged golden wild ales on local cherries. Made with Husk Beer in Harrogate. They tasted through their barrel library in the summer with Danny & Immy from Husk to find some barrels that would work nicely in a British cherry blend. The blend they came up with was taken from Tawny Port and Sauternes barrels. They came together to give spices, vanilla & a touch of acetic acid that we love in their cherry wild ales. The resulting blend was rested on ~200 g/l of local cherries, halved and stones left in. The blend pours a rich blood red, low carb, bursting with notes of cherry, almond, vanilla & oak - a little funky, acidic & dry. SHEPHERD OF THE SITH x Emperor's Brewery A beer made a long time ago. Two and a half years ago in fact. Damian from Emperor's joined Pastore on a Saturday in June 2021 and they brewed a mighty double mash imperial stout. It was laid to rest in oak barrels with their mother culture of wild yeasts where in a dusty cobwebby corner of the brewery it underwent its slow transformation. The blend took a long time to realise its potential, undulating between phases of bitterness, richness & acidity before after two years settling into a lovely blend of the three. The final blend marries rich chocolate and soy from the cognac barrel with red fruit acidity and oak from the Fredericksdal cherry wine barrel. A feast for the senses and without a doubt one of the most complex beers Pastore have released. PUHASTEHEART MELTER
A fruited sour brewed with raspberry, peach and apricot, made in collaboration with Bereta brewery. Sour raspberry stands out in the aroma, with the soft fruity qualities of apricot and peach mixed in the background. The taste is distinctly sour, with a full-bodied texture showing the berry fruitiness of raspberry, yellow plums and apples, peaches and nectarines, and the delicate sweetness of apricot ties the flavours together. Deep dark-brown beer with a soft and full body and bold aroma. Taste starts off with sweet notes of milk chocolate and toffee. Aftertaste balances the sweetness with roasted malts and dry cocoa . A warming and silky imperial Baltic porter with a rich taste. SAECULUM Silver Series Whisky barrel aged imperial porter brewed with fudge candy and coconut. Aroma combines sweet toffee, warming whiskey and toasted coconut flakes. The taste is full-bodied, intense and dessert-like. Palate is sweet with fudge candy, condensed milk and coconut, balanced by roasty cocoa and lingering warmth of whiskey in the aftertaste. Overtone used a balance of Nelson Sauvin, Citra and Mosaic hops in the mash and first dry hop for an overall well-balanced IPA with strong mango and sweet berry flavours, then finished the beer off with Nelson Sauvin Hop Kief to enhance the white wine aromas and fresh gooseberry notes. A HEAVENLY POP HIT Overtone have been desperate to use Peacharine hops since they first tried them. With it's strong juicy peach flavours they decided to use it in a sessionable pale ale at 5% putting Peacharine at the forefront. They enhanced the bright nectarine and lemon flavours with a little late addition of Pacific Sunrise to bring together this highly thirst-quenching juicy pale. A cherry glüh sour made with Coolhead brew from Finland. Pastore hosted Jamie from Coolhead last month to make a mixed culture pastry sour made using a similar method to their nordic sours. Both breweries co-ferment with Lactobacillus leading to a vibrant acidity across their sour beers. Glüh Sour was made with a vast amount of cherries and spiced with cardamom, cinnamon and vanilla. Based on mulled wine and glüh kriek. A lovely spiced winter beer. BLUEBERRY COBBLER The next in their winter series is a blueberry cobbler pastry sour made with blueberries, ginger, cinnamon and vanilla. Tangy, spiced, juicy blueberry goodness. MARGARITA MELA The final beer in Pastore's winter sour trio is a spiced apple margarita sour! Using one of their favourite base sour beers for the margarita with sea salt in the boil and lime juice in the fermentation, they then added a vast amount of apples & cinnamon. This one is as technicoloured as it's name suggests. Bright, vibrant yellow in the glass. It explodes across the senses like a passionfruit flavoured creme brulee. After the initial assault of tangy, tropical caramel comes soft white peach and cantaloupe. It's beautifully soft and pillowy; full of the taste of ripe peaches and cream. It's a cloud on your tongue, beautifully full and and so creamy that you could almost believe there's lactose in there, almost...WOW. NO FRILLS Pours crisp and clean with a beautiful pale yellow glow. It hides it's ABV behind a brilliant, bright wall of lemon-y, citrus-y, chicory bitterness. Clean aromas of lemon, red berries and sticky raspberry jelly are in abundance. It's oily, it's resinous with an extremely long and refreshingly bitter finish. SEASCAPE This super thick, super juicy DIPA was brewed in collaboration with Vitamin Sea Brewing in Massachusetts. It's thick like fresh mango custard with a beautiful creamy foam on top. It smells like a bouquet of soft, pink roses with honey, mint, and sticky sweet oranges. A zingy lemon sorbet sprinkled with lychee and fresh basil. An ocean of fantastic flavour. SPIRIT ANIMAL The smell of sweet, fresh strawberries explodes out of the glass. It's bursting with the giddy scents of summer; fresh cut grass, lillies, cherry blossom and fresh stone fruits. It pulls hard at your salivary glands with bright notes of grapefruit, pomelo and lime; rounded out with a hint of vanilla and some classic IPA hop bitterness. FLIPPERS FIZZ This Collab with Tripping Animals in sunny Miami is perfect for that Florida heat. It's smell is sticky with the heavy, sweet aroma of juicy ripe mangos and dried apricot. Pleasant earthy notes come through next giving the whole thing weight and complexity. Flavour wise it's fresh pineapple and lemon with some bubblegum sweetness. It's a whole mouthful, lovely and thick and juicy with an incredibly long and zesty lime finish.

This time they’ve gone for Nelson Sauvin and Motukea, plus a complex and innovative underpinning of hop products including a Hop Unlock thiolised yeast, Freestyle Super Sauvin (Nelson Sauvin with Phantasm powder) and Nelson Sauvin Hop Kief. They've played around with water and grist leaving a super soft, fluffy and drinkable DIPA. We're getting huge aromas of grape, Jolly Ranchers, strawberry laces, gooseberry and overripe mango. LILO This soft and luscious hazy pale is straw blonde in colour and packed with Citra and a touch of Azacca. We’re getting peach rings, pineapple chunks and a hint of dankness to balance the intense tropical fruit. GRIZZLY Clapton Craft have backed Two Flints since day one, so they were buzzing to get them down for a brew day and create a punchy west coast pale inspired by their iconic bear logo. Inspired by one of Tartarus' favourite Asian dishes, this saison is crammed full with all the flavours you would expect from this dish! Lemongrass & kaffir lime leaves gives fragrant & herbal notes, with chilli adding a little heat & finally coconut which adds a creamy sweetness. PONTIANAK A thick, smooth & indulgent stout brewed with plenty of speciality malts including chocolate malt to give a rich cacao flavour. Tartarus then added vanilla & almond to replicate the flavours of the frangipane dessert. OVERTONEPARABOL
This imperial stout was brewed with 11 types of malts including chocolate wheat and coffee malt then finished with Belgian candy syrup. The beer was then aged in American bourbon barrels for 12 months before being conditioned on Cacao Nibs. PLACES OF LIGHT A bright pale ale based on the same hop-bill as one of Overtone's classic IPAs, Northern Hemisphere. A strong tropical aroma matching the immediate tropical flavour hit, with some enjoyable subtle spice and bitter notes to finish. HONEY POP Transforming one of their highest rated TIPAs, Heavy Pop, into their honey DIPA series. The hop bill provides a juicy blend of passion fruit, sweet berries, papaya and a slight twist of bubblegum while Scottish honey adds a subtle honey flavour and a lot smoothness. JUKE BOX HERO Overtone's first time experimenting with CGX hops called for the experts. Northern Monk joined them to brew this exciting juicy number using Idaho 7 and Strata in CGX form to intensify all flavours from their original pellet form. On a thick juicy based, Idaho 7 CGX enhances a balance of tropical and piney flavours while Strata CGX promises passion fruit, strawberry and some "Rock Concert Cannabis" notes. PUGET SOUND A westie with a modern hop twist. Meridian adds some brightness to theis citrus-charged beer while Sultana maintains a strong traditional piney character. Mosaic hops throw in an enjoyable dankness with some light bitterness. NORTHERN HEMISPHERE One of Overtone's flagship IPAs with strong malt bill of white wheat and oats providing a creamy mouthfeel. Huge flavours of juicy tropical fruits and some bursts of fresh citrus. PLAYING ROBOTS A smooth drinking DIPA with a strong aroma of pineapple and lime zest. Flavours of passion fruit, lemon and peach burst through the dominance of sweet pineapple. GOLD 'N' GOSE A triple exotic fruited gose with Golden Berry, Prickly Pear and Passion Fruit, Blackthorn Sea Salt and Indian Coriander Seeds. Crisp, tart, sparkling and tangy. PORRIDGE ON THE RADIO A proper stout with 12 different malts to create depth, but at an easy going 6% to allow for a nice long session as we greet colder weather. Sweet, deep and rich, but with a cleaner less viscous finish than you’d expect. Azvex had a little trademark blip with Vantablack but fear not, here is something even better... They have been putting a bit of work into their dark beer recently and this was the perfect opportunity to make good use of their findings and produce a better peanut based stout. The Redemption of Vanity is a Peanut Butter Brownie Imperial Stout coming in at 13% ABV and is as good as they have done to date. RENAISSANCE TANKS With Renaissance Tanks Azvex ramped up that clean piney bitterness for you westy fans. Lotus, Chinook & Strata provide the artillery for this masterpiece. TEMPORARY INTERNET FILES For this West Coast Session IPA they changed protocols and used an old German lager strain to ferment out the beer, leaving a refreshing and crisp base for the Chinook, Idaho 7 and Azacca hops to shine on. This one is so clean and so so drinkable. ROBOT WOLF In case you didn't notice, Azvex's fave hop is the fantastic Citra. They thought that they should make a beer that really showcased this fabulous hop so they came up with Robot Wolf. Pastore are big fans of Balance's wild beers & the new space they've created at their taproom in Manchester which carries a wonderful list of UK wild producers. The grist is largely made up of heritage Hana malt along with oats, spelt, wheat and raw barley from a local farm. Hopped with some lovely cheesy aged hops from Balance & fermented in stainless steel for six months with Pastore's mother culture of wild yeasts and microbes. They have also let some rest in oak to revisit next year. ALCHEMIKIT TAKES TWO: EL DORADO & STRATA

Finally it's here! L.E.P's first coolship release! The only coolship brew from the 2021 brewing season, this 450L batch, was left out to cool slowly overnight in early March & moved to a neutral barrel with no added yeast to mature for almost exactly 2 years. It's come a long way, baby. Zesty lemon & apples come through with a little funk and a classic dry finish. THE BRETT ORGANIC STOCK ALE 2020 Welcome the return of one of L.E.P's original "core range" styles. Strong stock ales were historically brewed during the autumn months to mature over the winter. Brewed using local ingredients and assisted in fermentation by the wild yeasts likely present in the oak barrels. Their version uses organic Suffolk barley as well as their own organic homegrown Fuggles & Goldings hops then aged in wood with their mixed culture for 13 months. Further aged in bottle since, now almost 3 years old, it's ready to head out into the world. DRY HOPPED GRISETTE After having made recent appearances on keg, Little Earth feel it's about time they release this lil grisette into the world! Brewed in early 2022, the base beer was aged in barrel for 7 months before being dry hopped with both organic Chinook & Cascade hops from our own field! Monk's fifth release with Chris (simpsons artist), The Witch Doctor, wicca wicca woo. A devilishly juicy IPA, packed with Cashmere, Idaho 7, Cascade, Talus and Ekuanot hops, this IPA is brewed with some rye in the grist for a touch of golden orange colour and a deep, earthy spiciness to it. There will be tropical notes in there as well as some herbal and floral flavours, with hints of grapefruit and some lime. Resulting in this golden elixir, concocted in the cauldron by their brewers Sam and Sam. This one's been a long time in the works. The recipe development was played like a game of Consequences with the recipe passed between Lily (Queer Brewing Founder and Brewer) and Gareth (DEYA's Head Brewer). Deya's first use of Nectaron…used on the dry hop, paired with some Citra in the whirlpool.. Aroma is a big hit of papaya, candied pineapple and high grade orange squash. The taste is mango, pineapple and watermelon with some light sweet cereal peeking through. Lush! LHG's 'In Depth' series celebrates and explores a single hop. This time they have shone a light on Nelson Sauvin. From the New Zealand classic you can expect an elegant white grape character, a torrent of pressed gooseberries and a structured bitterness with a subtle hum of toasted black pepper. STEPPING STONES Refreshing and zesty with plenty of pleasing honeydew upfront, followed by tangy kiwi and with fresh lime to level, with a beautifully tart finish completed with a pinch of sea salt. Perfectly balanced and super moreish. TRACKSOUTHERN SUN
Using a brand new Hop to them, Superdelic - a really exciting NZ Hop, that they think gives off lots of sweet mango and fresh berries. They've partnered it Citra, Citra Cryo and Mosaic for a full juice kick. A super quaffable hazy Pale Ale. GLASS MOON Track's first ever DDH West Coast IPA. Super bright and with a lot of zip. They packed this one full of Citra, Mosaic & Galaxy. We get bitter orange, peppery passion fruit, tart grapefruit and notes freshly cut grass. LUSEN Lusen is drawn from the imagination of Track's Head Brewer Matt, and utilises fresh frozen whole cone Spalter from Pro Hops. They built a big malt base, hit it with Saaz in the whirlpool, before dry hopping it with the fresh Spalter cones. The result is a 7.2% Imperial Pilsner, that gives off fresh honey bread, sweet brioche, light spice and a deep, gentle, warmth. Something to savour. X Fast Fashion FRACTURED SMILE For the first beer in this series, Track had to go big, and big they went with their friends from Fast Fashion beer. They sent Track a box full of their fresh experimental hop Anchovy, which they partnered alongside Nelson, Nelson Hop Kief & Nectaron. Big notes of overripe melon, tart gooseberry and orange. Super hazy and heavy on the Rolled Oats & Wheat to give maximum mouth feel. They say this will be a slow project, that they will bring forward every time the stars (hops) align and Track feel they can bring you something special in concept and taste. SAFE SIDE Track have been working away behind the scenes on their IPAs. Slight tweaks here and there, with the vision of producing a beer that hits all the high notes that they love about this style. They are very happy to report that Safe Side is on point. An abundance of juicy tropical fruits, grapefruit, orange, and passionfruit with a pillowy soft mouthfeel. Citra, Nelson & Rakau coming together to deliver the goods on this delicious IPA. X Equilibrium LIME SCIENCE Lime Science takes inspiration from Equilibrium's first lime pilsner and adds a few process tweaks. Using experimental pilsner yeast, maize, and lime-forward Motueka as the base, Equilibrium finished this beer with lime juice and lime zest. Small enough to enjoy all day, we are getting crisp aromas of margarita and zesty limeade with punchy flavors of lime juice drink, clean citrus, 7-Up/Sprite vibes, and a hoppy brightness, all complemented by a snappy dry finish. DIRTY DIRTY MIATA MIATA Dirty Dirty Miata Miata is a DDH Hazy IPA brewed with the freshest Citra in the whirlpool and a blend of their freshest Galaxy, Citra, Nelson, and Mosaic in the dry-hop. A mash up of two of Veil's favorites - Cat Nap and White Miata! Layered notes of ripened cantaloupe, candy, papaya and melon. WE DED MON We Ded Mon is Veil's beloved and perfected 100% Citra hopped TIPA! This batch is blasting with hoppy flavors of grapefruit, pineapple, fruit roll-ups, and a touch of honey. WHITE FERRARI White Ferrari is one of The Veil's all time favorite Hazy Double IPAs. Crushed throughout the whole brewing process with the freshest Citra and Galaxy. This Fruit Smoothie Sour was brewed to celebrate Mortalis' fifth year anniversary. It blends papaya, peach, pineapple, vanilla, and cream. HYDRA SANGRIA This Fruit Smoothie Sour blends apple, concord grape, orange, raspberry, peach, and lemon. HYDRA STRAWBERRY TANGERINE BANANA This Fruit Smoothie Sour blends strawberry, tangerine, and banana. GEMINI BLUEBERRY PINEAPPLE GLAZED DONUT This fruited sour is part of our Gemini Series that focuses on small one-off batches. The duality of complementary and sometime contrasting fruits are blended with other adjuncts to enrich the flavors even further. This version features Pineapple, Blueberry and Glazed Donut pastries. HERA This Double IPA is the counterpart to Zeus. Showcasing a multitude of hops including Citra, Columbus, Centennial, and Galaxy. Hera is one of the softest beer we have ever made with luscious melon flavors with juicy aroma and a gentle delicate nature. MEDUSA PASSIONFRUIT & DRAGONFRUIT This Fruited Sour is a tart beer bursting with fruit. We blended this version with dragon fruit and passion fruit. At 5 ABV, it is a refreshing and crushable beer. Be careful not to look at it too closely or you might become a permanent fixture in the world of sour beers, as it has been said that looking at Medusa will turn you to stone! PAN This Double IPA combines Galaxy with Citra and Mosaic hops. The duo showcases passionfruit, peach and citrus flavors for a bold and fruity flavor perfect for the god of the wild. Inspired by the Belgian cassis, Holy Goat's version is primary fermented with a Brettanomyces blend which produces intense juicy stone fruit and citrus flavours. Blended from two batches of base beer, which were transferred onto around 300g/l of locally grown and freshly harvested Scottish blackcurrants. All ingredients were harvested within 33 miles of the brewery. SHRINEBUILDER Brewed with Scottish malted barley, wheat and rolled oats. Primary fermented with a mixed culture including a blend of Brettanomyces strains isolated from Belgian Lambic producers. This base beer showcases the intense yeast character without additions of fruit or hops, providing heaps of passionfruit, papaya, candied pineapple and apricot flavours. POHJALAFRENCH TOAST BANGER
A bänging imperial stout brewed with maple syrup, Tahitian vanilla pods and Ceylon cinnamon. Full-flavoured, rich and malty, with a heavy presence of chocolate and sticky maple syrup. The decadent and complex flavour of the Tahitian vanilla pods becomes more evident sip after sip as the beer warms, until ultimately revealing a subtle and lasting warming sensation from the cinnamon addition. APRICOTTA A full-flavoured American strong ale, brewed with US hops and lovingly aged in apricot brandy barrels. The first sips reveal a soft malt character and a distinct fruitiness with notes of poached pears and dried light stone fruits. The beer becomes more warming and comforting as it warms up, leaving a pleasant aftertaste of cracked walnuts, fig jam and baking spices that linger long after the final sip. FLOCENVIOUS NATURE

This seafaring-strength imperial stout was layered with a multitude of caramelised malts before being aged over copious amounts of cocoa, cacao nibs and vanilla for flavours evocative of molasses, hazelnut, American white oak, rum-steeped raisins and freshly emptied red wine barrels. Beak's two new foudre releases are on their way this week. Both sour ales were brewed using a unique blend of heritage grain grown a few miles from our brewery in the South Downs. They were primary fermented in steel then aged in an oak Chianti foudres for more than a year. THE MARINER, THE BARREL… This was conditioned for eight months over fresh rhubarb, imbuing it with all manner of wild yeast cultures. Spritzy and crisp with a gently winey acidity and flavours of honey, hay, sourdough and cracked black pepper. …AND THE RED LEVIATHAN This sour ale was conditioned for eight months over 350kg fresh raspberries. Prior to bottle conditioning, Beak blended the beer with a barrel-aged saison that had spent two years maturing with British-grown yuzu. Spritzy and lightly tart with flavours reminiscent of almond, black cherry, lemon zest and pinot noir. PRESSURE DROPEXTRA CHEESE

This smooth, easy going, easy drinking imperial stout was aged in a Linkwood Distillery whisky barrel the Speyside area in Scotland and then on coffee and vanilla pods. Made from a blend of Otherworld and Sinnister stouts and crafted with the help of bar manager extraordinaire Sam Ellingham. UP FRONTWAS IST DAS??! DAS IST EIN LAGERBIER!!!!
Well, it was a long time coming, but here it is, finally... in fact here *they* are, three new beers! All in extremely limited quantities!!! DAS IST EIN LAGERBIER A classic unfiltered Munich Helles - Malty, crisp, and slightly sweet with moderate bitterness and a touch of spicy hop character from the 100% Saaz hop additions. Slow fermented on a traditional German lager yeast from Weihenstephan, and lagered for 30 days. MÉLANGE A 7.2% ABV mixed fruit, mixed ferment, BA American wild ale - with blueberry, sour cherry, physalis, pomegranate, and passion fruit. Aged in Aux Gravains, Pinot Noir barrels for 12 months, and bottle conditioned for a further 6 months. Light, yet lip-smackingly sour, with deep oak tannins and red wine character on the back. OH MA DARLIN' A 6.9% ABV Bretted pale ale with Clementine and Limone Di Sorrento - fermented on a blend of three strains of Brettanomyces Bruxellensis, that impart a complex array of funky tropical and dark berry fruit esters. Aged for 10 months on 10% fresh Spanish Clementine juice and zest, with just a touch of Limone di Sorrento. All unfined, unfiltered, and vegan friendly. BEAKSKWISH

EKUANOT A PHASE MOM x Koelschip Yard Brewed with one of Overtone's favourite local bars and good friends in Glasgow, Koelschip Yard, to celebrate their 6th Birthday. The brief was simple, make a banging beer. Putting Ekuanot at the forefront they've encouraged a strong fruity aroma including lemon, lime and papaya. The combination of El Dorado and Kohatu hops add some fresh tropical fruit characters to the beer while Motueka rounds it off with a pleasant citrus finish. 5TH BIRTHDAY BEERS!x KING OF FEASTS
The first beer in Overtone's 5th Birthday series is a collaboration with none other than foodie & legend King of Feasts. They wanted to create the perfect 'kitchen beer', one that hits the spot when you're thirsty and session on throughout the day. They brewed none other than a simple 4% juicy and hazy Citra pale ale. Using Citra in all its forms to bring through maximum flavours including peach, passion fruit and melon. A small addition of Simcoe hops add some gentle bitterness and well-balanced citrus twists. P*NK PANTHER x Panther Milk Overtone have been big fans of Panther M*lk since the early days of sharing bottles in the back of Tabac. For those who don’t already know, Panther M*lk is the ‘world’s first’ oat milk-based vegan cream liqueur cocktail brand and they started it all here in Glasgow. They’ve loved watching the business and brand grow these last couple years and were even more ecstatic when Panther Milk agreed to collaborate with them on one of their 5th Birthday Beers. Overtone decided to create a beer combining their Ice Cream smoothie sour recipe and Panther Milk's Strawberry Panther M*lk, and most importantly with a strong emphasis on their commitment to being 100% vegan. Therefore they have created their first ever fruited ice cream smoothie sour using only strawberries and vegan soft serve ice cream. They're proud to say no panthers were harmed making this product. OUR BARLEY AGED x Lochlea This collaboration with Lochlea Distillery celebrates not only Overtone's but their 5th Birthday this month too as well as the inception of their future journey together. Earlier this year Overtone brewed their first double mash stout using 12 kinds of malts including Caramalt, Chocolate Malt, Chocolate Wheat, Chocolate Rye, Carabohemian, you get the point. The rich chocolate caramel base was then matured in Lochlea's special selection of barrels allowing them to create their first core product 'Our Barley'. This barrel combination included the perfect recipe of ex-bourbon, ex-Oloroso sherry casks as well as shaved, toasted and re-charred barriques. PURE MAGIC x Nänni-Pää Pure Magic makes it's annual return for Overtone's 5th Birthday and who better to collaborate with than a local artist they can't get enough of Nänni-Pää. The beer is as good as ever with a multitude of flavours from creamy peach and mango, lemon and lime to grassy and dank. It comes in an even better dressed can though of course... PICTURE OF HEALTH x We Were Promised Jetpacks The fifth and final beer in their birthday series is the loudest and most amplified beer they've brewed yet, and who better to collaborate with than the incredible We Were Promised Jetpacks who are also celebrating their 20th Birthday this year. The Indie Rock band have been hugely credited for their atmospheric sound backed with their empathetic lyrics captured in their distinctive Scottish accent. Overtone have certainly been big fans of the band since their debut album, These Four Walls and were delighted when we spied them drinking an Overtone one night. Needless to say we slipped in their DMs and the rest is history. Back to the beer though, with them both reaching a milestone and We Were Promised Jetpacks' music inspiring them to make something ambitious and dynamic, they decided to brew a TIPA. Using a new product for Overtone called Phantasm, a powder derived from Marlborough Sauvignon Blanc grapes, then double dry-hopped with Citra, Nelson Sauvin and Motueka hops, this beer is undoubtedly their hoppiest and haziest beer to date. A super sessionable, yet powerfully hopped pale ale brewed with Amarillo, Simcoe & Citra hops. These impart punchy citrus and tropical fruit flavours and pine notes over the top of a light sweet maltiness on the finish. MILK OF THE PEARL A decadent milk stout packed full of vanilla! Lactose and vanilla add sweetness and body and pair up with the deep, dark and roasty malt backbone to create a rich and smooth sweet stout. TRUCKASAURUS A hop-packed IPA brewed with Neon Raptor and Brewser! They stacked the hop bill out with Citra, Mosaic, Motueka and Strata hops which provide huge citrus and stone fruit flavours, along with notes of pineapple and lime, with subtle dank pine notes and a light bitterness on the finish. NEON RAPTORCRIMES AGAINST BREWING: COFFEE, CARAMEL & ALMOND Amongst the many crimes against brewing, this blend of rich coffee, sweet caramel, and gently woody almond is not one of them. This double pastry stout is tasty and warming, and beer can still taste of beer, but it doesn't have to. SEVERED ISLAND x Seven Island This collaboration with Greek Legends Seven Island goes way back to 2018 and their debut at Hop City in Leeds. They’d just won the Ratebeer award for best new beer in the world for their Citra Blast IPA and Neon Raptor were drinking the finest hoppy beers on the planet together. But they’ve ignored hops this time and made a thick Tiki cocktail inspired sour full of severed slices of pineapple and passion fruit, the juice of sweet cherries, the exotic island spices of cinnamon and nutmeg, and then finished it off with milk sugar and magic. The best way to consume this sweet and sour, tangy and tantalising collaborative cocktail is before or after a meal. Maybe we’ll have some Greek inspired weather and we can enjoy sipping it after a BBQ with friends and family. Here’s the geeky bit, Phantasm powder, which has been combined with Simcoe, Citra and Mosaic Cryo Hops® in this case, is a unique ingredient made from the skins of New Zealand Sauvignon Blanc grapes. VOLCANIC LIGHTNING 3rd this week we have Volcanic Lightning, another big favourite from last year that is well overdue a re-release. It is hopped with Citra, Idaho 7 & Azacca to levels that rival our DIPAs, so it's not surprising that this beer has aromas of pineapple, grapefruit and citrus exploding out the glass. VIKING RODEO Then we have a big hazy monster IPA for you. 6.7% of saturated Citra & Motueka. Tropical zest and a slightly sweet finish. Beautiful. MANA - PINA COLADA Last this week but certainly not least is a new iteration of MANA. This newly discovered recipe was found buried beneath the mud flats of a long forgotten animal park. How it got there nobody knows but nonetheless this Helles lager is a truly refreshing, well balanced beer brewed in a traditional style with all German grain and hops. It's back! Cherry mead aged in Woodford Reserve bourbon barrels that previously held Marlobobo's BA imperial stout: NON-FOSSIL FUEL. The same day they emptied barrels to blend said imperial stout, they kept two of the best barrels in the blend and filled them with mead. One of them was filled with Marlobobo's beloved "Stevnsberry" cherry mead. The mead picked up notes of mocha, vanilla, caramel, bourbon and chocolate. Wylam's DIPAS are like buses, police officers and blue moons they come in twos and you have to wait a long time for them. Fear not though after Greenbutt Revenges incredible popularity they’ve cranked up the DIPA engines to drop this one-off brew. A hop bill of Citra, Strata, Nectaron and HBC 586 throw tropical notes of guava and nectarine to the front of the palette. Big, juicy and dangerously moreish this beer stands tall amongst the Wylam DIPA dynasty. BEAKEMBERS X Craft Beer Channel
This cold-conditions West Coast IPA was brewed in collaboration with their friends at the Craft Beer Channel to celebrate 10 years on YouTube. It's crisp, clear and utterly dripping in Citra, Simcoe and Amarillo hops for sappy evergreen forest aromas and flavours reminiscent of orange zest, cinder toffee and grapefruit marmalade. NOOK Pale in name but IPA in character, this beer was double dry hopped with silly amounts of Citra and Sabro for flavours of squishy ripe mango, desiccated coconut and freshly squeezed orange juice. Recently LHG's good friends from across the pond, Finback, came over for a visit and they just had to brew something special. Putting their heads together, they dreamt up this massive beer that delivers a wave of hoppy character alongside heaps of fruit flavour. A classic malt profile, with plenty of oats and white wheat, with buckets of mango and pineapple. Layered up with additions of Citra throughout, to amp up the juiciness and punctuate with top notes of lychee and grapefruit. CODE BREAKER X Rivington LHG got together with Rivington to brew this delicious Hazy IPA - a style they're both well known for. With Nelson Sauvin, Citra and Mosaic (plus an addition of Phantasm™) making up the hop bill, you can expect big hitting flavours reminiscent of white wine grapes, gooseberry and fresh citrus peel, nicely rounded off with tropical hints. A light hazy hoppy sunshine sour made with the wonderful team from Gamma in Denmark. Pastore had the pleasure of hosting Tomasz from Gamma at the brewery last month. A brewery very much renowned for their hazy IPAs, we brought together our styles to make a zesty fresh dry hopped sour. The mixed culture zero ibu hazy sour base was hopped liberally with Zappa and Belma bringing a ridiculous amount of zesty lime and grapefruit alongside tongue tingling lactic acidity, the beer is smooth and refreshing. BANANA SPLIT The return of a classic. They made one batch earlier this year for the Cambridge Beer Festival, suffice to say it went down better than they hoped, it sold out by the end of Tuesday and was one of their most requested re-brews / cans! A hefty pastry sour, fermented with their fresh sour mixed culture, conditioned on a vast amount of bananas, cherries, strawberries and vanilla. A TAVOLA A light funky hoppy dry beer inspired by table beers from some of Pastore's favourite producers (The Kernel, Jester King, Wildflower). This year's batch was hopped with whole hop citra and coriander seeds in the boil before fermenting and conditioning in stainless steel with their mother culture of wild yeasts and microbes for six months. Citrus peel and coriander on the nose, a light funk, balanced bitterness and lactic acidity. SANDCASTLES & SHADE White Dog have used their trustworthy NEDIPA malt base (stuffed with creamy oats and wheat) to create a thick, hazy, creamy body and mouthfeel and fermented with their favorite yeast strain. We have dry hopped this aggressively with Citra (T90) and Mosaic (CRYO)! SAUSAGE SNUGGLER Their next collab is with German neighbours Lieber Waldi Making super fresh and fruity IPA's and also representing their sausage dog Waldi! So they couldn't help but brew a NEIPA! They've used 100% hops from hop alliance! NZH214, Paradigm, Solero, Multihead, YQH1320 & Newzilla. ROCKY ROAD When brewing beer, especially styles you are new too, could often become complicated. White Dog found their German styled Triple Chocolate cake not as thick as they like their pastry stouts to be. Because they used real adjuncts like vanilla and coconut, the pastry didn't shine as much as they wanted. So... they rebuilt their pastry stout. Thicker, Sweeter, less coffee, less bitter. This a thick 12% double mashed with lactose, gooey imperial stout! Expect huge flavours of Chocolate, Vanilla, Walnuts & Marshmallow. VANILLA & TONKA The second is a double mashed, with lactose, thick sticky imperial stout. Filled with sweet, sweet, Madagascar Vanilla, Tahitian Vanilla, Mexican Vanilla and Tonka beans! FUERST WIACEKSCARY CASSETTE TAPES
An IPA dry hopped with Citra and Idaho 7. Scary dankness, shot through with fresh zesty lemons, ripe tangerines, pink grapefruit and lime. A mouthful of honey soaked melon doused in juicy citrus with that scary dankness making it's second appearance. Light in the mouth but a haunting dryness lingers well after the glass is empty. Spooky. TALKIE WALKIE A West Coast IPA dry hopped with Citra and Simcoe. Crazy amounts of mango, orange and pine on the nose and then it smacks you right in the taste buds with a heavy dose of pink grapefruit bitterness. Silky smooth as it slides across your tongue leaving you dry mouthed and thirsty for another face full. BARONNEIGHBOURHOOD WATCH
A thick and gluey, curtain twitching, oat heavy DDH pale ale with loads of sweet hop aroma from Azacca, Idaho 7, Amarillo and Centennial. Lemons and white grapefruit all up in your grill. STILL LIFE X Gamma Baron met up with Gamma’s Tom on brew day, and used some of their methods for full collaborative power. El Dorado, Eclipse and Nelson Sauvin in this sweet and fluffy New England style IPA. CHIN WAG Loads of layers of biscuit, caramel and dark malts to build a complex malty stout to warm the cockles. They are so excited to be teaming up to brew a new beer in celebration of their latest album, Insatiable Thirst For Torment, which drops this Friday Church Road Records. This 6.66% Blood Orange West Coast IPA is the perfect pint for pit recovery. Bitterness from large amounts of hops in the kettle blend with a pithy, resinous sweetness from the blood orange concentrate. Simcoe Cryo helps lift the whole beer with a delicious drinkability. Duration Brewing are creating some of the most nuanced, complex and accomplished beers in the UK right now so Beak felt honoured to welcome co-founder Bates and brewer Andy for a collab and epic Southern-inspired BBQ earlier this month. The result is Faces, a 6.5% IPA brewed with an elaborate hop bill of Centennial, El Dorado, Idaho 7, Mosaic and Vic Secret hops, all sitting upon a fluffy, bouncy base of spelt and oats. We’re getting aromas of ripe pineapple and candied mango followed by ethereal and undulating flavours of candied orange, grapefruit, pine sap and mulberry jam. POMONA ISLANDSCRAMBLE FOGGY

BUBBLEGUM ROCK ON PLASTIC TRANSISTORS Yes that’s right, craft is dead. It’s just another spenny product for the consumer’s head. A DDH DIPA on Simcoe and Sabro. Drink it down and understand that it’s delicious, but it don’t mean a thing. I DON'T LIKE SAND I don’t like West Coast Pales with Amarillo, Strata, Crystal and Magnum. TARTARUS' 3RD BIRTHDAY BEER! For such a beast Tartarus have brewed a monstrous IPA, sweet, bitter, strong and packed with 30g/l of hops split between the boil and dry hop. During a 2 hour boil they added 1.5Kg of hops, a mix of warrior, simcoe and amarillo, every 5 minutes. A total of 37.5Kg was added to the kettle, totalling nearly 200IBU’s. They then dry hopped it with 37.5Kg of warrior, simcoe and amarillo, for a total hop rate of 75Kg (30 g/l). Barley wine or IPA? Who knows, all we know is that it’s a monster beer. LORELEI Berliner Weisse fruited with Guava, Passionfruit and Mango for a super fruity yet sour beer. Easy drinking, perfect for summer. THE ARCH ROGUE Wheat beer brewed with 200kg of raspberries and 20kg lime for a fruity twist on classic style. LEFT HANDED GIANTHARD LIGHT

Whilst the Finback team were in the UK for festival season, Burnt Mill jumped at the opportunity to get a collaboration organised with their old friends! This volume of collab is a New England IPA with Citra, Rakau and Idaho 7. They combined their classic malt bills to give a base of extra pale, flaked oats and chit for a soft mouthfeel to showcase some juicy hops. Flavours of citrus, tropical and stone fruits blend together for a truly delicious IPA. SEPARATING CIRCLES This beer was such a success last year it made it into Burnt Mill's Greatest Hits! A gluten free DDH New England Pale, Separating Circles boasts hops, Citra and Motueka along with a firm brewery favourite, HBC 586. Light in bitterness this pale is full of juicy tropical fruits with a twist of citrus lemon and lime notes from Motueka. BRIGHT MIDNIGHT This has had 18 months sitting in Cognac casks followed by a further year of aging. This time has given us a very special beer, aromas of spiced apple lead the way to a boozy fruit cake character with essences of oaky vanilla, smokey molasses and hints of chocolate. A truly sumptuous barrel aged imperial stout. STACK YARD A wheat focused pale ale with a blend of extra pale, wheat malt and flaked wheat, to give us a soft cereal malty base. Burnt Mill have then brought together Citra, Mosaic and HBC 630 for a melody of citrus fruits and red berries, balanced with the peachy esters of their house yeast. |
