‘Twas the night before Krampus and all through the brewery, the brewers were stirring something quite chew-ery!
Neon Raptor have been brewing up imperial stouts for as long as they’ve been brewing and Christmas always feels like the right time to release a big scary beast.
So, although Centaur Army and BA Centaur Army are on their merry way, they feel like they've been neglecting the flavours of the season. Here is Krampus Night, Neon Raptor's first seasonally themed imperial stout. This Krampus will beat your taste buds with deliciousness and will kidnap your heart with every sip, in a good way.
This is Christmas pudding in a can, all rich dark fruity cakey stouty goodness. Keep away from bad (and good) children, this one is for naughty adults only!*
*well, fine, nice adults can drink it too I guess, just don’t let the Krampus find out.

Yaaay!
This collab has been a long time coming, especially as Dan has local roots and Neon Raptor can often be found drinking pints of cask with him in Nottingham pubs when he pops over from Spain.
After the delicious success of the Double IPA collaboration they brewed with Garage over in Barcelona earlier in the year, it made perfect sense to brew that style again. After all, Neon Raptor are in beer now, it’s their job to be repetitive, their job, their job, repetitiveness is their job.
They put their lucky red hats together along with the hop merchants of Barth Haas X , and to a citrusy flurry of Mosaic and Simcoe they added Bru-1 Spectrum in the dry hop* for a full on tropical pineapple blast!
Neon Raptor think you’ll all agree that this is a juicy woozle wuzzle of a Double IPA.

A delicious motherboard of hops are doing it right within this hazy IPA. It's an instantly crushable fruit salad! If you get lucky there's fragments of tangerine, peach, and pineapple flavours and aromas, and, one more, lime. Lose yourself to RAM.​

Track have given one of their most loved styles the single hop treatment with one of their favourite hops, Mosaic. This Hop was meant for beers like this. Fresh, bright orange peel with a pronounced and lasting bitterness.

FIELDS OF GOLD

This IPA is the first in Europe to feature a brand new Hop from NZ Hops LTD new Bract Brewers Programme. The Hop is NZ-101 and is currently being trial-phased with breweries all across the world.
A super juicy IPA, that is brimming with tropical fruits. Tonnes of fresh mango, sweet papaya, and tinned peaches. Ultra low bitterness allows this hop to really express it's character, giving an almost candy like quality.

DOOM WITCH
BA Flanders Red with Strawberries.
Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.  
This blended base was transferred onto the spent fruit (tayberries) and lees from Holy Goat's previous batch of Spectral Lore. They refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery. 
Drink young or age, this will get weirder.

ORANGE SKIES
Back to the classics, an easy-drinking Pale Ale of America’s West Coast, this is a style where balance between punchy, aromatic hop notes and solid drinkability is key.
Orange Skies is a bright, aromatic 'Westie' brewed with El Dorado, Simcoe and Mandarina Bavaria hops and a generous helping of hand-zested oranges.
At its heart, it is malty with a marmalade and pine bitterness. An abundance of grapefruit zest and sticky stone fruits with a salivating dry finish.
Unbarred brewed this beer with London Bottle Shop royalty Ghost Whale, it’s an homage to their original Orange Pale Ale from way back in the early days of UnBarred.

Kees made this double cold IPA together with the Amsterdam brewery Walhalla Brewery.
This beer is named after the Zeeland goddess Nehalennia. She was the protector of trade and seafaring.
This double cold IPA is fresh, dry and firmly hopped.

PASTRY TRAIN PECAN PIE
The second station of the Pastry Train of Brouwerij Kees. This time a Pecan Pie!
Taste sweet flavors of the stout combined with the nutty pecan flavors.
The Pastry Train runs past various stations with only the tastiest pastries and desserts from all over the world. Four times a year the train arrives at a special place for the perfect pastry. What would be the next stop?

COFFEE IS MY FAVOURITE COLOUR
More than just an imperial stout! A pitch black imperial coffee stout, strong in taste, body and high in alcohol. The addition of coffee beans makes it the perfect beer for the coffee lover.
This stout is brewed together with Rock City from Amersfoort. Strong, rich and powerful!

DROP IT LIKE IT'S HOT
Licorice and coffee flavors in a can! Brewery Kees and Folkingebrew joined forces and made this delicious imperial pastry stout.

BARREL PROJECT PEATED 2023
Here is another beautiful barrel project from Brouwerij Kees. This edition a thick Imperial stout that has been in Laphroaig barrels for 20 months.
Perfectly balanced beer with flavors of the delicious peated single malt whiskey from the beating heart of the island of Islay. An exciting Imperial stout with a light smoke!

A sweet collaboration between Brouwerij Kees and the Swedish brewery Närke Kulturbryggeri.
This imperial stout was brewed more than a year ago and the beer has been in bourbon barrels all this time.
Cinnamon, coffee, chocolate and bourbon, the madness, right?

Pastore's "Winter Wild" series is on it's way!

SAKE KASU BEER 2023 x The Sparkling Sake Brewery
One of Pastore's favourite beers from last year returns with some tweaks this month.
For this year's edition they took the sake kasu (lees) from Naoki at The Sparkling Sake Brewery up the road from them in Little Downham and primary fermented some rice saison on it along with their mother culture of wild yeasts before ageing for a further six months on lees and finally bottle conditioning.
The key difference from last year is the primary fermentation - last year's vintage was aged for a month on lees post stainless steel ageing. The primary ferm has brought lots more sake / rice fermentation character with lots of citrus esters & savoury elements. The beer is all together spritzy, rich, complex, acidic & dry!

SANGUINETO x Husk Beer
A blend of barrel aged golden wild ales on local cherries. Made with Husk Beer in Harrogate.
They tasted through their barrel library in the summer with Danny & Immy from Husk to find some barrels that would work nicely in a British cherry blend.
The blend they came up with was taken from Tawny Port and Sauternes barrels. They came together to give spices, vanilla & a touch of acetic acid that we love in their cherry wild ales.
The resulting blend was rested on ~200 g/l of local cherries, halved and stones left in.
The blend pours a rich blood red, low carb, bursting with notes of cherry, almond, vanilla & oak - a little funky, acidic & dry.

SHEPHERD OF THE SITH x Emperor's Brewery
A beer made a long time ago. Two and a half years ago in fact. Damian from Emperor's joined Pastore on a Saturday in June 2021 and they brewed a mighty double mash imperial stout. It was laid to rest in oak barrels with their mother culture of wild yeasts where in a dusty cobwebby corner of the brewery it underwent its slow transformation.
The blend took a long time to realise its potential, undulating between phases of bitterness, richness & acidity before after two years settling into a lovely blend of the three. The final blend marries rich chocolate and soy from the cognac barrel with red fruit acidity and oak from the Fredericksdal cherry wine barrel. A feast for the senses and without a doubt one of the most complex beers Pastore have released.

HEART MELTER
A fruited sour brewed with raspberry, peach and apricot, made in collaboration with Bereta brewery. Sour raspberry stands out in the aroma, with the soft fruity qualities of apricot and peach mixed in the background. The taste is distinctly sour, with a full-bodied texture showing the berry fruitiness of raspberry, yellow plums and apples, peaches and nectarines, and the delicate sweetness of apricot ties the flavours together. A fruity sour beer with rich flavours, while still being playful and refreshing.

RENEGADE SNARES

A modern West Coast IPA brewed with Simcoe, Strata and Chinook CGX hops. Collaboration with Cloudwater Brewery. This IPA pours clear with a golden colour, aroma shows both sweet tropical fruits and fresh citrus. The first taste is playfully fruity with ripe pineapples and peaches. As the taste develops, it brings out more bitter, dry and resinous notes. An IPA with a powerful hop profile packed with fruity and resinous notes.

NIGHT SLITHER

A powerful and complex Baltic porter. Collaboration with Frontaal Brewing Company. Deep dark-brown beer with a soft and full body and bold aroma. Taste starts off with sweet notes of milk chocolate and toffee. Aftertaste balances the sweetness with roasted malts and dry cocoa . A warming and silky imperial Baltic porter with a rich taste.

​SAECULUM Silver Series

​Whisky barrel aged imperial porter brewed with fudge candy and coconut. Aroma combines sweet toffee, warming whiskey and toasted coconut flakes. The taste is full-bodied, intense and dessert-like. Palate is sweet with fudge candy, condensed milk and coconut, balanced by roasty cocoa and lingering warmth of whiskey in the aftertaste. A porter with powerful flavours and aroma, with both sweet dessert-like features and an intense roastiness.

ROBUST PORTER

MONOLITH

Monolith was aged for three years in a Chianti foudre with wild yeast strains. The result is full of chocolate and vinous oak flavours, with pleasing farmhouse aromas and mild acidity.

ASSEMBLEGE V5

Assemblage 5 is Burning Sky's unique annual release, blending beers of different ages from their mixed and spontaneous fermentation programs. Each barrel brings its own character to the table, quietly contributing to the finished beer.

PHANTOSAUR x Craft Metropolis
Brewed to celebrate Craft Metropolis' birthday, this super special beer focuses on Phantasm Cryo (YCH 303 Hop Trial). This delicious blend balances Phantasm powder with Citra, Mosaic & Simcoe Cryo. The result is a highly aromatic juicy IPA with enjoyable tropical flavours combined with white grape notes.


PARABOL
This imperial stout was brewed with 11 types of malts including chocolate wheat and coffee malt then finished with Belgian candy syrup. The beer was then aged in American bourbon barrels for 12 months before being conditioned on Cacao Nibs.


PARABOLA
The other half to Parabol, this half spent additional time ageing on toasted coconut flakes. This imperial stout was brewed with 11 types of malts including chocolate wheat and coffee malt then finished with Belgian candy syrup. The beer was then aged in American bourbon barrels for 12 months before being conditioned on Cacao Nibs.


PUNCHING IN A DREAM
Using a new product by Freestyle hops, SubZero Hop Kief is a concentrated lupulin primarily created for use on the cold side to intensify the flavours. Overtone used a balance of Nelson Sauvin, Citra and Mosaic hops in the mash and first dry hop for an overall well-balanced IPA with strong mango and sweet berry flavours, then finished the beer off with Nelson Sauvin Hop Kief to enhance the white wine aromas and fresh gooseberry notes.


A HEAVENLY POP HIT
Overtone have been desperate to
 use Peacharine hops since they first tried them. With it's strong juicy peach flavours they decided to use it in a sessionable pale ale at 5% putting Peacharine at the forefront. They enhanced the bright nectarine and lemon flavours with a little late addition of Pacific Sunrise to bring together this highly thirst-quenching juicy pale.


THINKING ORANGE
​The latest in their ice cream smoothie sour series, this time with bright orange and sweet mandarin juice added for full on orange creamsicle flavour.

So Azvex have made it through 2 whole years.
In some ways, it's hard to believe it has already been that long and in others it feels like they have been here forever.
Either way, they couldn't have done it without all of you amazing supporters and customers!

Impeccably balanced and utterly indulgent.

It wouldn't be a birthday if Azvex didn't revamp the original birthday beer!
For this year’s base recipe, Azvex applied all they have learned about their dark beer this past year.
It provides a more robust foundation for the adjuncts to blend in to. Creating a more enriched drinking experience. They toned down the maple (slightly) and added in some El Salvadorian coffee beans.

The ultimate breakfast stout.

​MANA - WILD BERRY
This iteration of MANA focuses on the darker fruits...
It is full to the absolute brim with all the wild berries you can imagine…once again becoming the most amount of fruit they have ever added to a beer.

Blender is LHG's barrel program, blending styles, fruits and barrels in the City of Bristol. A blend of five mixed fermentation barrel aged Saisons, aged in ex-red wine French oak ranging from 12-18th months in wood. Conditioned on Valencia Orange and Apricot with a late Motueka Hop Kief dry hop addition. (230g/l).
EXPAND THE CLOUDS
Hazy DIPA with Citra, Nelson Sauvin and Nectaron Layers and layers of white grape, passion fruit, pineapple and grapefruit combine to help LHG push their interpretation of this style to it's limit. With their heaviest addition of oats and wheat yet, this provides a huge creamy texture and base for the structured sweetness to follow.

Hazy IPA with Simcoe, Superdelic & Motueka This is an exciting time for us as LHG showcase the incredible new hop, Superdelic for the very first time! GLUH SOUR
A cherry glüh sour made with Coolhead brew from Finland.
Pastore hosted Jamie from Coolhead last month to make a mixed culture pastry sour made using a similar method to their nordic sours. Both breweries co-ferment with Lactobacillus leading to a vibrant acidity across their sour beers.
Glüh Sour was made with a vast amount of cherries and spiced with cardamom, cinnamon and vanilla. Based on mulled wine and glüh kriek. A lovely spiced winter beer.

BLUEBERRY COBBLER

The next in their winter series is a blueberry cobbler pastry sour made with blueberries, ginger, cinnamon and vanilla.
Tangy, spiced, juicy blueberry goodness.

The final beer in Pastore's winter sour trio is a spiced apple margarita sour!
Using one of their favourite base sour beers for the margarita with sea salt in the boil and lime juice in the fermentation, they then added a vast amount of apples & cinnamon.

POLY CHROME
This one is as technicoloured as it's name suggests. Bright, vibrant yellow in the glass. It explodes across the senses like a passionfruit flavoured creme brulee. After the initial assault of tangy, tropical caramel comes soft white peach and cantaloupe. It's beautifully soft and pillowy; full of the taste of ripe peaches and cream. It's a cloud on your tongue, beautifully full and and so creamy that you could almost believe there's lactose in there, almost...WOW.

NO FRILLS

Pours crisp and clean with a beautiful pale yellow glow. It hides it's ABV behind a brilliant, bright wall of lemon-y, citrus-y, chicory bitterness. Clean aromas of lemon, red berries and sticky raspberry jelly are in abundance. It's oily, it's resinous with an extremely long and refreshingly bitter finish.

SEASCAPE

This super thick, super juicy DIPA was brewed in collaboration with Vitamin Sea Brewing in Massachusetts. It's thick like fresh mango custard with a beautiful creamy foam on top. It smells like a bouquet of soft, pink roses with honey, mint, and sticky sweet oranges. A zingy lemon sorbet sprinkled with lychee and fresh basil. An ocean of fantastic flavour.

SPIRIT ANIMAL

The smell of sweet, fresh strawberries explodes out of the glass. It's bursting with the giddy scents of summer; fresh cut grass, lillies, cherry blossom and fresh stone fruits. It pulls hard at your salivary glands with bright notes of grapefruit, pomelo and lime; rounded out with a hint of vanilla and some classic IPA hop bitterness.

​FLIPPERS FIZZ

This Collab with Tripping Animals in sunny Miami is perfect for that Florida heat. It's smell is sticky with the heavy, sweet aroma of juicy ripe mangos and dried apricot. Pleasant earthy notes come through next giving the whole thing weight and complexity. Flavour wise it's fresh pineapple and lemon with some bubblegum sweetness. It's a whole mouthful, lovely and thick and juicy with an incredibly long and zesty lime finish.

​Volley, two walls, goal and game for Basqueland! We couldn't pass up the opportunity to brew a Double Dry Hop IPA in this series of anniversary beers. This is a very fresh, pale and soft-bodied creation with a rich blend of dry-hop hops that results in pleasant aromas of melon, grapefruit, pineapple and passion fruit. To take it at the fronton or​wherever you want!

ROW ROW ROW YOUR BOAT
Made in collaboration with the Bilbao brewery Mumbo Jumbo, the Madrid-based Oso Brew and the Gordexolarra Laugar.
As a team they rowed together to make this classic IPA beer recipe, like those of the last century. Golden in color, malty in character, transparent in appearance and a mosaic of aromas that will transport you directly back to the hoppy beer boom of the 90s: strong aromas and flavors of 'dank' throughout, with hints of citrus and resin, and a persistent bitterness.

Brewed in collaboration with Cheltenham brewery Deya Brewing Company.
Made with the precision of the aizkolari axe. New Zealand Double IPA offers an explosion of intense aromas of cantaloupe and ripe pineapple, thanks to Motueka and Rakau hops. Complemented by a velvety feel and a medium to full body, it owes its richness to the addition of flaked and malted oats, as well as dextrin malt. Enjoy it sip after sip.

Brewed in collaboration with Stavanger brewery Lervig Brewery.

This beer is a delicious evolution of their previous hit, 'Got Chunk', where Basqueland have replaced the coconut with marshmallows, maintaining the decadent flavors of rich cocoa vanilla and freshly baked cookies. With a blend of 7 malts that provides complexity, the addition of lactose gives it a smooth and silky texture, and prolonged cooking caramelizes the sugars to perfection. Take a sip and let the charm of Fudge Fantasy transport you!

The result? A diabolical imperial stout , born between infernal flames, twisted whispers of the wood and antagonistic celebration. This creation displays an exquisitely dark mouthfeel like a dance at the threshold of a cliff. It shows a pronounced sweetness reminiscent of sweet wine, with subtle hints of maple syrup, complemented by the rich tannin notes of oak that balance the drink. Flavors of very ripe grapes, layers of dark fruits, dark chocolate and notes of figs and raisins are appreciated.

Brewed in unholy communion with Lervig, Laugar, Whiplash, Oso, Mumbo Jumbo, La Debauche and Fuerst Wiacek.
A journey through the woods.
Aged for 16 months in Pedro Ximénez, French oak and maple syrup barrels and then conceived on October 6 during the 8th anniversary celebration weekend. Basqueland gathered in the darkest corner of the winery to dream up the perfect blend of aged beers through a spectral tasting, searching through the barrels to create the final beer in the 8th Anniversary Series and  the ninth creation in the Barrel Works series .
