A light hazy hoppy sunshine sour made with the wonderful team from Gamma in Denmark. Pastore had the pleasure of hosting Tomasz from Gamma at the brewery last month. A brewery very much renowned for their hazy IPAs, we brought together our styles to make a zesty fresh dry hopped sour. The mixed culture zero ibu hazy sour base was hopped liberally with Zappa and Belma bringing a ridiculous amount of zesty lime and grapefruit alongside tongue tingling lactic acidity, the beer is smooth and refreshing. BANANA SPLIT The return of a classic. They made one batch earlier this year for the Cambridge Beer Festival, suffice to say it went down better than they hoped, it sold out by the end of Tuesday and was one of their most requested re-brews / cans! A hefty pastry sour, fermented with their fresh sour mixed culture, conditioned on a vast amount of bananas, cherries, strawberries and vanilla. A TAVOLA A light funky hoppy dry beer inspired by table beers from some of Pastore's favourite producers (The Kernel, Jester King, Wildflower). This year's batch was hopped with whole hop citra and coriander seeds in the boil before fermenting and conditioning in stainless steel with their mother culture of wild yeasts and microbes for six months. Citrus peel and coriander on the nose, a light funk, balanced bitterness and lactic acidity. The label artwork shows Parker's Piece in Cambridge, my nonna had a flat overlooking the park and when growing up "A Tavola" was the call to the table for an inevitably delicious meal shared with family. 3 SONSPICK 'N' MIX X Cloudwater
3 Sons' DIPA collab hopped with cryo 602 which has a gummy bear vibe, and HBC735 which tastes like skittles, so it's a sweet shop in a DIPA. WHITE DOGA feast of hops from one of the Netherlands finest, all their lovely beer is super rated, if you've not delved into the wonderful world of White Dog you really should...
SANDCASTLES & SHADE White Dog have used their trustworthy NEDIPA malt base (stuffed with creamy oats and wheat) to create a thick, hazy, creamy body and mouthfeel and fermented with their favorite yeast strain. We have dry hopped this aggressively with Citra (T90) and Mosaic (CRYO)! SAUSAGE SNUGGLER Their next collab is with German neighbours Lieber Waldi Making super fresh and fruity IPA's and also representing their sausage dog Waldi! So they couldn't help but brew a NEIPA! They've used 100% hops from hop alliance! NZH214, Paradigm, Solero, Multihead, YQH1320 & Newzilla. ROCKY ROAD When brewing beer, especially styles you are new too, could often become complicated. White Dog found their German styled Triple Chocolate cake not as thick as they like their pastry stouts to be. Because they used real adjuncts like vanilla and coconut, the pastry didn't shine as much as they wanted. So... they rebuilt their pastry stout. Thicker, Sweeter, less coffee, less bitter. This a thick 12% double mashed with lactose, gooey imperial stout! Expect huge flavours of Chocolate, Vanilla, Walnuts & Marshmallow. VANILLA & TONKA The second is a double mashed, with lactose, thick sticky imperial stout. Filled with sweet, sweet, Madagascar Vanilla, Tahitian Vanilla, Mexican Vanilla and Tonka beans! FUERST WIACEKSCARY CASSETTE TAPES
An IPA dry hopped with Citra and Idaho 7. Scary dankness, shot through with fresh zesty lemons, ripe tangerines, pink grapefruit and lime. A mouthful of honey soaked melon doused in juicy citrus with that scary dankness making it's second appearance. Light in the mouth but a haunting dryness lingers well after the glass is empty. Spooky. TALKIE WALKIE A West Coast IPA dry hopped with Citra and Simcoe. Crazy amounts of mango, orange and pine on the nose and then it smacks you right in the taste buds with a heavy dose of pink grapefruit bitterness. Silky smooth as it slides across your tongue leaving you dry mouthed and thirsty for another face full. BARONNEIGHBOURHOOD WATCH
A thick and gluey, curtain twitching, oat heavy DDH pale ale with loads of sweet hop aroma from Azacca, Idaho 7, Amarillo and Centennial. Lemons and white grapefruit all up in your grill. STILL LIFE X Gamma Baron met up with Gamma’s Tom on brew day, and used some of their methods for full collaborative power. El Dorado, Eclipse and Nelson Sauvin in this sweet and fluffy New England style IPA. CHIN WAG Loads of layers of biscuit, caramel and dark malts to build a complex malty stout to warm the cockles. Cacao nibs also aiding the chocolaty aroma and slick drinkability. Carbonated on the lighter side for a creamier finish. TRACKESPUNA

Track have a lot of fun getting to use new products such as this WHC Lab yeast, and each time they feel we get to know it a little more and are able to steer it in a direction they feel best suits the beer. This has been a while in the making and Black Iris are super excited to finally tell you all about the latest in their band collaboration series. Celestial Sanctuary have been an absolute favourite at Black Iris HQ, their groovy and undeniably crushing brand of death metal always hits the spot. They are so excited to be teaming up to brew a new beer in celebration of their latest album, Insatiable Thirst For Torment, which drops this Friday Church Road Records. This 6.66% Blood Orange West Coast IPA is the perfect pint for pit recovery. Bitterness from large amounts of hops in the kettle blend with a pithy, resinous sweetness from the blood orange concentrate. Simcoe Cryo helps lift the whole beer with a delicious drinkability. Duration Brewing are creating some of the most nuanced, complex and accomplished beers in the UK right now so Beak felt honoured to welcome co-founder Bates and brewer Andy for a collab and epic Southern-inspired BBQ earlier this month. The result is Faces, a 6.5% IPA brewed with an elaborate hop bill of Centennial, El Dorado, Idaho 7, Mosaic and Vic Secret hops, all sitting upon a fluffy, bouncy base of spelt and oats. We’re getting aromas of ripe pineapple and candied mango followed by ethereal and undulating flavours of candied orange, grapefruit, pine sap and mulberry jam. POMONA ISLANDSCRAMBLE FOGGY
Brewed to celebrate the third birthday of Tap & Crowler Shibuya, Tokyo. A Mouth-watering juicy IPA with Sabro, Idaho7 and Nectaron. KANPAI! BUBBLEGUM ROCK ON PLASTIC TRANSISTORS Yes that’s right, craft is dead. It’s just another spenny product for the consumer’s head. A DDH DIPA on Simcoe and Sabro. Drink it down and understand that it’s delicious, but it don’t mean a thing. I DON'T LIKE SAND I don’t like West Coast Pales with Amarillo, Strata, Crystal and Magnum. They’re piney and bitter and resinous and they get everywhere. TARTARUSLADON
TARTARUS' 3RD BIRTHDAY BEER! For such a beast Tartarus have brewed a monstrous IPA, sweet, bitter, strong and packed with 30g/l of hops split between the boil and dry hop. During a 2 hour boil they added 1.5Kg of hops, a mix of warrior, simcoe and amarillo, every 5 minutes. A total of 37.5Kg was added to the kettle, totalling nearly 200IBU’s. They then dry hopped it with 37.5Kg of warrior, simcoe and amarillo, for a total hop rate of 75Kg (30 g/l). Barley wine or IPA? Who knows, all we know is that it’s a monster beer. LORELEI Berliner Weisse fruited with Guava, Passionfruit and Mango for a super fruity yet sour beer. Easy drinking, perfect for summer. THE ARCH ROGUE Wheat beer brewed with 200kg of raspberries and 20kg lime for a fruity twist on classic style. LEFT HANDED GIANTHARD LIGHT
Spiced ginger cake and tender cantaloupe entice you in, accompanied by clean citrus and crisp mint, leading you to delicious white grapes straight out the freezer (courtesy of the PhantasmTM). Whilst this IPA hits various flavour points, it’s the superbly dank, classically heady overtones that really deliver with a fantastically complex, long finish. Hooray! Magnifico is here! First brewed in Boston, this low gravity, 3.6% super hoppy pale ale is what you want for the last weekend of August! And hopefully for a few other weekends too! BURNT MILLFLIGHT OF WHALES
Whilst the Finback team were in the UK for festival season, Burnt Mill jumped at the opportunity to get a collaboration organised with their old friends! This volume of collab is a New England IPA with Citra, Rakau and Idaho 7. They combined their classic malt bills to give a base of extra pale, flaked oats and chit for a soft mouthfeel to showcase some juicy hops. Flavours of citrus, tropical and stone fruits blend together for a truly delicious IPA. SEPARATING CIRCLES This beer was such a success last year it made it into Burnt Mill's Greatest Hits! A gluten free DDH New England Pale, Separating Circles boasts hops, Citra and Motueka along with a firm brewery favourite, HBC 586. Light in bitterness this pale is full of juicy tropical fruits with a twist of citrus lemon and lime notes from Motueka. BRIGHT MIDNIGHT This has had 18 months sitting in Cognac casks followed by a further year of aging. This time has given us a very special beer, aromas of spiced apple lead the way to a boozy fruit cake character with essences of oaky vanilla, smokey molasses and hints of chocolate. A truly sumptuous barrel aged imperial stout. STACK YARD A wheat focused pale ale with a blend of extra pale, wheat malt and flaked wheat, to give us a soft cereal malty base. Burnt Mill have then brought together Citra, Mosaic and HBC 630 for a melody of citrus fruits and red berries, balanced with the peachy esters of their house yeast.

Say hello to Flamingo, a new 6.5% India Pale Ale brewed with huge additions of super fresh Simcoe and Citra hops along with lemon and lime zest for flavours of peach, apricot, passionfruit, key lime pie and pool-side Daiquiris. POEMS A rebrew of an 8% DIPA made in collaboration with Beak's friends at Verdant. Brewed with heavy additions of oats, wheat, Nelson Sauvin and Nectaron hops for flavours reminiscent of coconut, marshmallow, strawberry, and Piña Coladas. DONZOKOCHILE LIME GOSE
Brewed with yellow habaneros, it's a fiery, crushable beer with zingy limes and a salty finish. Like a spicy margarita on a sunny afternoon. Yeehaw. BALANCESAISON DE MAISON BLEND 4
A blend of barrel aged beers fermented with saison yeast, Lactobacillus and Brettanomyces, dry hopped with UK Cascade and Goldings. These two hops bring harmonious flavours which work fantastically with the base blend. Earthy tones of floral honey and gingerbread from Goldings contrast the sweet tangerine and grapefruit of UK Cascade, bringing nuance and complexity. The finish is resinous yet mellow. Originally conceived as a series of developing their benchmark for DIPA, back when hazy, and highly hopped beers of all strengths beers were new to the UK, this time they’re excited to explore the newest production techniques, the very latest hop varietals, products and developments, and innovations from the field of brewing yeast from a position of expertise and experience. They’re excited to challenge every one of their norms, and edge towards the limits of their comfort zone, all while presenting this series of collaborations with a depth of explanation and periodic analysis. Cloudwater's intention is to work hand-in-hand in collaboration with breweries that broke ground and helped create the scene we love today, integrating breweries whose work now also focuses on progressive modern hoppy beer along the way. With that in mind, this week we will be receiving... V14 IMPERIAL IPA x Other Half This version has Nectaron Cryo, a hop variety and product that wasn’t available, and Motueka Cryo which wasn’t available as a hop product at the time of the original V series release. Let’s keep exploration alive! ...along with... CHERRY POPSICLE SODA This is the first in Cloudwater's new series of sodas made in collaboration with Coffee Shop, Yas Bean, based in Macclesfield. Absolutely bursting with Cherry flavours and light carbonation which makes this a super refreshing adult soft drink. ENDURING EFFORTS Cloudwater have been utilising new hop HBC586 over the last few months and have finally decided to give it a show of its own. They've brewed up a 4% Pale Ale that punches above its weight in terms of pure fruity impact. Bold tropical flavours are balanced with a slightly herbal finish. AGLOW Their passion for West Coast IPA continues in this 5.8% beer. A bold West Coaster, this is the little sibling of their Crystallography series, with all the hop burst and clean finish but in a lighter and crisper body. FRUCHTTANZ A once a year kind of beer, with huge addition of Raspberry & Passionfruit to create a tart, punchy, sour experience everyone has come to expect with this style. The added salinity balances out the huge fruit flavours with a savoury edge. THE IMMORTAL JELLYFISH x Time & Tide The Immortal Jellyfish features copious amounts of big hitting New Zealand hops Riwaka & Motueka hops. Expect a flavour profile dominated by soft lime, prickly passion fruit, and overripe mango in this juicy collab with Time & Tide. TRACKTAKAKA
Track's beloved Arosa Helles, dry hopped with a healthy dose of Riwaka. MARGINAL GAINS A re-brew of one their favourite sours. Filled to the brim with tart blueberries and conditioned on a whole load of coconut. A thick, creamy, tangy fruit smoothie of a beer. SPACE TO ROAM A DDH IPA brewed in collaboration with The Seed: A Living Beer Project, Atlantic City, NJ. One of many new friendships formed when Track went over to the USA for the first time to pour their beer at Whale Watching. Dry hopped with a generous amount of Nectaron T90, Motueka T90, Nelson Sauvin T90 & Nelson Sauvin Subzero Hop Kief, we get overripe peach, cantaloupe melon, white wine and a slight lime sharpness that keeps everything in check. This might be their best DDH IPA to date. TURN ON THE LIGHTS It's been 3 months since Track's last Gold Top release, and it's certainly back with a bang. Citra, Citra Cryo, Galaxy, Eclipse Spectrum & HBC 586 work together for an absolute assault of hops, all on top of their big body base of Extra Pale, wheat & big juicy oats combined with Track's signature lactose addition gives a super smooth mouthfeel with a touch of sweetness. Showcased last week and all through London Craft Beer Festival, our much anticipated collab with Amundsen is now available. We've been good friends with the Amundsen team for some years and are very excited to showcase what is a very UnBarred and Amundsen beer - incredibly creative, incredible flavours, and with incredible theatre. Cherry Garsour boasts a full-bodied, velvety smooth Berliner Weisse sour base. Big aromas of luscious cherry, decadent dark chocolate, and the delightful sweetness of vanilla and lactose draw you in, ending in an underlying rich indulgence of fudge chunks, perfectly complementing the tangy cherry base. Delightfully tart, the interplay of cherry, chocolate, and fudge come together to give those dessert flavours you’d expect to find in the tub of ice-cream! AZVEXBATTLE SWANS
It's been a while since Azvex gave you some wallpaper hop paste so they thought they would give you the murkiest yet and are very proud to present to you Battle Swans. As you can probably tell by looking at it, Azvex didn't hold back on the hops for this 8.5% DIPA. Citra, Strata & Motueka attacking from all fronts. REALITY BLIZZARD Azvex have had a few pops at the west coast style now, and more recently, goes at the modern take on it. This time they made a few bigger changes and not only did it lead to their best West Coast IPA yet but it is one of their best beers period. Reality Blizzard is a modern West Coast IPA at 6.5.%. Azvex matched up the bitterness and fruitiness really well in this one thanks to the Chinook, Citra & Strata hops. Drink cold for maximum refreshment. LEFT HANDED GIANTHIDDEN WATERFALL x Hudson Valley
When Hudson Valley Brewery came over from the US for a visit to LHG, they just had to brew something special! Peachy with a little botanical hum upfront, followed by nostalgic sour sweets, bursting with juice that then make way for fresh baked cherry pie, with a little hint of drying cranberry from the Citra. Jammy as sin, this is class in a glass. PEACEFUL NOISE x Gamma Hailing from Denmark, Gamma Brewing took a trip over to Bristol a few weeks back, so they put their heads together and came up with this delicious brew! Warming lemon balm and ripe passion fruit greet you, promptly followed by a beautiful pairing of fresh gooseberry and round mango with a trademark spice from Zappa. A huge backbone of apricot and buzz of menthol round out this funky fruit bomb. YOU ARE FLYING Floral aromas led by lemon balm and young berry leaf give way to white peach and soft pink grapefruit. Gently rounded stone fruit vibes are held alongside bright citrus peel, giving way to piney notes that deliver a lovely bitterness towards the end. Full bodied and pillowy, just delightful. An American wheat beer which all of Sureshot agree is tasting fantastic. A fresh take on the style, they've brewed this one like a wheat beer, fermented it like a West coast, and dry hopped it like one of their IPAs. Islay Whisky Barrel Aged, Mixed Ferment Imperial Sour, with Scottish Raspberries, Tayberries and Honey. Fermented on Hornindal Kveik - a blend of cooperative farmhouse strains which produce a tropical flavour profile, with a complex aroma that presents as subtle stone fruit, pineapple, and dried fruit leather - and a unique species of Lachancea yeast selected for its ability to produce lactic acid. Aged in Islay whisky barrels for 6 months, to add complex yet subtle peat-smoked character, with 140g/l Raspberries, 85g/L Tayberries, and 70g/L Caramelised Polyflora Honey. NECTARNOMICON This thick and juicy Nectar IPA was co-fermented with a wild strain of nectar specialist yeast harvested from wildflowers (Metschnikowia Reukaufii) and another specialist yeast able to unlock bound thiols. This Upfront collaboration with Holy Goat Brewing combines their experiences of using nectar yeasts and utilising polyfunctional thiols, with the goal to produce the most intensely aromatic and flavourful IPA possible. One to tantalise the old taste buds. Slurp is kettle soured with Bullhouse's house lactobacillus culture, resulting in a bright and sour base. They have added a generous amount of passionfruit to the FV, infusing the beer with juicy tropical notes that perfectly complement the sourness. GULP Gulp has the same base as Slurp but this time they've added a load of fresh raspberry and mango puree to their clean, tart base, resulting in an immensely gulp-able, thirst quenching fruited sour. MERC BRO Bullhouse's legendary triple dry-hopped NEIPA is here! A hazy, candied tropical fruit and pineapple aroma and flavour. Smooth creamy, chewy malty body. A huge tropical whirlwind of flavoursome, juicy fruitiness. This months Monster Series beer is Hydra Fight a Pineapple, Passionfruit and Mango Imperial Fruited Gose at a whopping 10% You may have seen that due to the new duty changes beers over 8.4% will have a higher rate to pay. This does mean this beer will be a little more than it was previously and sadly there’s very little we can do about it but we promise it's worth it! PINCH POINT Last September, when Australian post punk heroes Pinch Point, played at Neon Raptor's local DIY venue JT Soar, they asked for some decent local ale on their rider. Sadly for them they ended up with theirs! We kid of course, they loved it, and so they just had to do a collaboration on their return to Nottingham. Pomona gave this Pale a dry hop of Cryo Mosaic and Eclipse, had a sip, thought it was a goner but the can came back to my lips, the very next second. It just couldn’t stay away. WIGGLY WORLD So I do Mosaic and I do Citra. So I do Idaho 7 and I do Sabro. It’s a Small Pale, it’s never straight up and down. BEAKSHRUG
This fruited sour was brewed with over a tonne of blueberries along with huge amounts of vanilla and black cherry. Is it even beer? Who knows. It’s sweet and tangy in all the right places with kirsch on the nose followed by flavours reminiscent of marzipan, black forest gateau and panna cotta. ATOMWALKING ON THE MOON
Atom's brand new IPA is crammed with a massive dry hop of Citra, Galaxy and Riwaka and a heavy grist of oats for a soft, velvety mouthfeel. Its smooth body is drenched with flavours of grapefruit, mango and passionfruit. Brewed in collaboration with the beautiful and amazing folk from Message In A Bottle in Cleethorpes.
