Smoke fills the mouth, like standing in front of an open fire on a cold morning...the coffee bursts in with dark chocolate in abundance....next comes the sweet maple syrup, rich and deep...hair of the dog never felt this good. PASTOREDDH ONDA
A light hazy hoppy sunshine sour made with the wonderful team from Gamma in Denmark. Pastore had the pleasure of hosting Tomasz from Gamma at the brewery last month. A brewery very much renowned for their hazy IPAs, we brought together our styles to make a zesty fresh dry hopped sour. The mixed culture zero ibu hazy sour base was hopped liberally with Zappa and Belma bringing a ridiculous amount of zesty lime and grapefruit alongside tongue tingling lactic acidity, the beer is smooth and refreshing. BANANA SPLIT The return of a classic. They made one batch earlier this year for the Cambridge Beer Festival, suffice to say it went down better than they hoped, it sold out by the end of Tuesday and was one of their most requested re-brews / cans! A hefty pastry sour, fermented with their fresh sour mixed culture, conditioned on a vast amount of bananas, cherries, strawberries and vanilla. A TAVOLA A light funky hoppy dry beer inspired by table beers from some of Pastore's favourite producers (The Kernel, Jester King, Wildflower). This year's batch was hopped with whole hop citra and coriander seeds in the boil before fermenting and conditioning in stainless steel with their mother culture of wild yeasts and microbes for six months. Citrus peel and coriander on the nose, a light funk, balanced bitterness and lactic acidity. The label artwork shows Parker's Piece in Cambridge, my nonna had a flat overlooking the park and when growing up "A Tavola" was the call to the table for an inevitably delicious meal shared with family. 3 SONSPICK 'N' MIX X Cloudwater
3 Sons' DIPA collab hopped with cryo 602 which has a gummy bear vibe, and HBC735 which tastes like skittles, so it's a sweet shop in a DIPA. WHITE DOGA feast of hops from one of the Netherlands finest, all their lovely beer is super rated, if you've not delved into the wonderful world of White Dog you really should...
SANDCASTLES & SHADE White Dog have used their trustworthy NEDIPA malt base (stuffed with creamy oats and wheat) to create a thick, hazy, creamy body and mouthfeel and fermented with their favorite yeast strain. We have dry hopped this aggressively with Citra (T90) and Mosaic (CRYO)! SAUSAGE SNUGGLER Their next collab is with German neighbours Lieber Waldi Making super fresh and fruity IPA's and also representing their sausage dog Waldi! So they couldn't help but brew a NEIPA! They've used 100% hops from hop alliance! NZH214, Paradigm, Solero, Multihead, YQH1320 & Newzilla. ROCKY ROAD When brewing beer, especially styles you are new too, could often become complicated. White Dog found their German styled Triple Chocolate cake not as thick as they like their pastry stouts to be. Because they used real adjuncts like vanilla and coconut, the pastry didn't shine as much as they wanted. So... they rebuilt their pastry stout. Thicker, Sweeter, less coffee, less bitter. This a thick 12% double mashed with lactose, gooey imperial stout! Expect huge flavours of Chocolate, Vanilla, Walnuts & Marshmallow. VANILLA & TONKA The second is a double mashed, with lactose, thick sticky imperial stout. Filled with sweet, sweet, Madagascar Vanilla, Tahitian Vanilla, Mexican Vanilla and Tonka beans! FUERST WIACEKSCARY CASSETTE TAPES
An IPA dry hopped with Citra and Idaho 7. Scary dankness, shot through with fresh zesty lemons, ripe tangerines, pink grapefruit and lime. A mouthful of honey soaked melon doused in juicy citrus with that scary dankness making it's second appearance. Light in the mouth but a haunting dryness lingers well after the glass is empty. Spooky. TALKIE WALKIE A West Coast IPA dry hopped with Citra and Simcoe. Crazy amounts of mango, orange and pine on the nose and then it smacks you right in the taste buds with a heavy dose of pink grapefruit bitterness. Silky smooth as it slides across your tongue leaving you dry mouthed and thirsty for another face full. BARONNEIGHBOURHOOD WATCH
A thick and gluey, curtain twitching, oat heavy DDH pale ale with loads of sweet hop aroma from Azacca, Idaho 7, Amarillo and Centennial. Lemons and white grapefruit all up in your grill. STILL LIFE X Gamma Baron met up with Gamma’s Tom on brew day, and used some of their methods for full collaborative power. El Dorado, Eclipse and Nelson Sauvin in this sweet and fluffy New England style IPA. CHIN WAG Loads of layers of biscuit, caramel and dark malts to build a complex malty stout to warm the cockles. Cacao nibs also aiding the chocolaty aroma and slick drinkability. Carbonated on the lighter side for a creamier finish. TRACKESPUNA
A Track Lager infused with Steep Soda Lemonade. A warm breeze kisses at your ankles as you traverse the mountain path. Higher & higher you climb until finally there it is...the lone lemon tree which bares a single fruit. You bite in to the soft flesh & waves of aromatic sweetness, balanced pithy bitterness & a lingering fruitiness dance across your tongue. Summer is here. CAPTURING MERCURY Track partnered their base IPA recipe with their new Thiolised yeast strain to bring you a super fruity, soft & hazy IPA. Galaxy & Strata combine to create a cocktail of ripe tropical fruits, spritzy orange and candy floss. Track have a lot of fun getting to use new products such as this WHC Lab yeast, and each time they feel we get to know it a little more and are able to steer it in a direction they feel best suits the beer. This has been a while in the making and Black Iris are super excited to finally tell you all about the latest in their band collaboration series. Celestial Sanctuary have been an absolute favourite at Black Iris HQ, their groovy and undeniably crushing brand of death metal always hits the spot. They are so excited to be teaming up to brew a new beer in celebration of their latest album, Insatiable Thirst For Torment, which drops this Friday Church Road Records. This 6.66% Blood Orange West Coast IPA is the perfect pint for pit recovery. Bitterness from large amounts of hops in the kettle blend with a pithy, resinous sweetness from the blood orange concentrate. Simcoe Cryo helps lift the whole beer with a delicious drinkability. Duration Brewing are creating some of the most nuanced, complex and accomplished beers in the UK right now so Beak felt honoured to welcome co-founder Bates and brewer Andy for a collab and epic Southern-inspired BBQ earlier this month. The result is Faces, a 6.5% IPA brewed with an elaborate hop bill of Centennial, El Dorado, Idaho 7, Mosaic and Vic Secret hops, all sitting upon a fluffy, bouncy base of spelt and oats. We’re getting aromas of ripe pineapple and candied mango followed by ethereal and undulating flavours of candied orange, grapefruit, pine sap and mulberry jam. POMONA ISLANDSCRAMBLE FOGGY
Brewed to celebrate the third birthday of Tap & Crowler Shibuya, Tokyo. A Mouth-watering juicy IPA with Sabro, Idaho7 and Nectaron. KANPAI! BUBBLEGUM ROCK ON PLASTIC TRANSISTORS Yes that’s right, craft is dead. It’s just another spenny product for the consumer’s head. A DDH DIPA on Simcoe and Sabro. Drink it down and understand that it’s delicious, but it don’t mean a thing. I DON'T LIKE SAND I don’t like West Coast Pales with Amarillo, Strata, Crystal and Magnum. They’re piney and bitter and resinous and they get everywhere. TARTARUSLADON
TARTARUS' 3RD BIRTHDAY BEER! For such a beast Tartarus have brewed a monstrous IPA, sweet, bitter, strong and packed with 30g/l of hops split between the boil and dry hop. During a 2 hour boil they added 1.5Kg of hops, a mix of warrior, simcoe and amarillo, every 5 minutes. A total of 37.5Kg was added to the kettle, totalling nearly 200IBU’s. They then dry hopped it with 37.5Kg of warrior, simcoe and amarillo, for a total hop rate of 75Kg (30 g/l). Barley wine or IPA? Who knows, all we know is that it’s a monster beer. LORELEI Berliner Weisse fruited with Guava, Passionfruit and Mango for a super fruity yet sour beer. Easy drinking, perfect for summer. THE ARCH ROGUE Wheat beer brewed with 200kg of raspberries and 20kg lime for a fruity twist on classic style. LEFT HANDED GIANTHARD LIGHT
Spiced ginger cake and tender cantaloupe entice you in, accompanied by clean citrus and crisp mint, leading you to delicious white grapes straight out the freezer (courtesy of the PhantasmTM). Whilst this IPA hits various flavour points, it’s the superbly dank, classically heady overtones that really deliver with a fantastically complex, long finish. Hooray! Magnifico is here! First brewed in Boston, this low gravity, 3.6% super hoppy pale ale is what you want for the last weekend of August! And hopefully for a few other weekends too! BURNT MILLFLIGHT OF WHALES
Whilst the Finback team were in the UK for festival season, Burnt Mill jumped at the opportunity to get a collaboration organised with their old friends! This volume of collab is a New England IPA with Citra, Rakau and Idaho 7. They combined their classic malt bills to give a base of extra pale, flaked oats and chit for a soft mouthfeel to showcase some juicy hops. Flavours of citrus, tropical and stone fruits blend together for a truly delicious IPA. SEPARATING CIRCLES This beer was such a success last year it made it into Burnt Mill's Greatest Hits! A gluten free DDH New England Pale, Separating Circles boasts hops, Citra and Motueka along with a firm brewery favourite, HBC 586. Light in bitterness this pale is full of juicy tropical fruits with a twist of citrus lemon and lime notes from Motueka. BRIGHT MIDNIGHT This has had 18 months sitting in Cognac casks followed by a further year of aging. This time has given us a very special beer, aromas of spiced apple lead the way to a boozy fruit cake character with essences of oaky vanilla, smokey molasses and hints of chocolate. A truly sumptuous barrel aged imperial stout. STACK YARD A wheat focused pale ale with a blend of extra pale, wheat malt and flaked wheat, to give us a soft cereal malty base. Burnt Mill have then brought together Citra, Mosaic and HBC 630 for a melody of citrus fruits and red berries, balanced with the peachy esters of their house yeast.
