After studying viticulture and oenology in Beaune, Simon LECOMTE sets out on a journey to meet avant-garde winegrowers. He feeds on their words and practices and returns to Burgundy to set up a brewery there with the aim of transposing oenology and winemaking processes to the production of his beers. He begins by filling around thirty barrels which he stores with fellow winegrowers. In 2018, he set up the brewery in Sens, a small hamlet of Sennecey-Le-Grand, following the discovery of an old virgin 17th century barn. After several months of refurbishment, he installed his tanks and continued the work initiated a few years earlier. It was not until spring 2019 before the first beers were released from their barrels.

All the operations carried out at the brewery are controlled by the lunar and maritime calendar. Both high and low tides have a microbiological influence during brewing, fermentation and aging of beers. They act, with the moon, like a breath and each of the phases of the calendar corresponds to a particular intervention. This movement of breathing on the astral scale has a concrete impact on the development and quality of the beers produced.

Drawn 24 hours before being used in the production of beer, the water is energized in one of the brewing tanks in order to "bring" it back to life and allow it to dissolve the starch as well as possible and promote leaching. activity of enzymes during the brewing phase.​

The Moon is a Hollow Spacecraft

Several science fiction books of the early 20th century, including H.G. Wells’ The First Men in the Moon, take place within a hollow moon inhabited by aliens. In 1970 two Soviet scientists took this seemingly whimsical premise a step further, proposing that the moon is actually a shell-like alien spacecraft built by extraterrestrials with superior technology and intelligence.
